Have to be VERY careful not to toast 'em too long as they CHAR very easily and taste awful when that happens! 3 mins. in toaster oven, but if I toast more than one, I decrease the time as the oven is already heated.

I like almost all veggies, too--except for okra!

Spinach is a favorite of mine and my DH. I take fresh or frozen spinach and saute it in a large frying pan with just enough olive oil to thinly coat the bottom of the pan. Add whatever seasonings you prefer and move the spinach around the pan so that it all gets coated with oil and seasonings. It only takes 5 minutes and clean up is a breeze.

I like to serve it with carbohydrate-loaded entres, such as spaghetti or ladagna.

will eat cooked veggies,but prefer them raw............with a little light dip........

When you get to a plateau, think of it as a landing on the stairway to your goal. And maintenance is a lifelong plateau, so a bit of "rehearsal" for maintenance isn't the worst thing in the world

i love veggies and always have--i think that i like at least all veggies cooked at least one way even though i may cringe at some dishes.

tomatoes [fresh home grown] not hotbox are my all time favorite. as a kid, this would be my lunch when i stayed parts of the summer with my grandparents.

sweet potatoes, preferably baked, but mashed is a close second. unlike regular potatoes, sweet potatoes are filled with vitamins, mineral and fiber that it is considered a 'superfood'

steamed broc & cauliflower with a touch of olive oil brushed on and herbs---YUM!

i love raw veggies, but i find that i get bored quickly with them.
about a year and half ago i went on a weird kick for something i didn't grow up with and that most people will make faces over---brussel sprouts. if they aren't overcooked, they are awesome.

Don, i am with you on the spinach thing. in our house, we use it the same as lettuce and putting it not only in our salads but on our sandwiches. when the kids were younger they preferred it to reg leaf lettuce and had no idea it was the dreaded spinach lol --i can use the frozen in some recipes---but never canned. i can't do canned greens or peas or anything that has those shades of green ewww lol

As I posted on her blog: I have shunned veggies all my life, but since getting serious about my health have tried, with some success, to build an appreciation for veggies. My preferences are still a bit narrow, so I have room for improvement...thx for the tips...hopefully I'll be chowing on even MORE veggies soon!

I got to thinking...perhaps we can share our favorite ways to enjoy our veggies and enlighten each other on new ways to boost our veggie intake?

My favorite veggies are raw: red peppers, baby spinach and baby carrots. I will sometimes add to the mix brocolli & cauliflower. I call baby spinach my new "potato chip" and will rip into a bag and chow down when I have the munchies.

Another way I enjoy my veggies is to cut 'em up blanche / parboil them and marinate in Italian dressing while chilling. Yum!

A third favorite of mine is to toast low carb flatbread as it becomes crunchy...then break it up into pieces and use as a replacement for taco / corn chips for scooping up salsa...yum!
