What an interesting challenge, June. At that same website you mentioned in your post, they list several variations on your recipe sweetened with several things. One used agave nectar and one used pureed dates. The agave is warned against in the book, and dates are very high in naturally occurring sugar, so I would hesitate on either of those. But I do think you're on to something, so I'll look too.
I did find another lower carb although still not "blood sugar solution legal" at this site: http://www.meriter.com/wordpress/?p=1412 He used Truvia (trade name for stevia blend). I used to have some desserts sweetened with apple sauce or pureed pears -- I'll try to see if I can find them.
