We really like Tuscan Pork Loin. Use only lean loin, place in cooker with 2TBS EVO, 1/2 cup white wine, Rosemary to taste, White wine vinegar 2 TBS, and Herbes de Provance to taste, about 4-6 hours depending on size of the roast. The sauce can be served over brown rice. Yummy
I'm not sure if its my favorite- but it was very good! I had to serve 8 people last sunday all of whom has 2nds and 1 person 3rds- so it made plenty.
I put about 2.5lbs of ground beef(very lean) in the crock pot and then added Hungrygirl's BBQ sauce(Below) on top to make sloppy joes. Most people ate it on buns; hubby and I had open faced sandwiches on high-fiber bread.
I increased the recipe of course to: 2 cups tomato sauce, 1 cup ketchup, 1/3 cup brown sugar & apple cider vinegar and liberally sprinkled with garlic and spices. I also added 1/2 a large onion diced up small and about 3/4cup of diced up celery. The kids didn't even notice the celery- the only person who did used to be a chef by trade.
It was a hit- and the tomato based BBQ sauce is so much lower in calories & stuff than any of the inexpensive bottled brands you see at the normal grocery store!
I left the beef and mushroom stew recipe from Sparkpeople in the crockpot this morning.... added some seasonings and I'll be home in time to do any last minute adjustments... that and a good coleslaw should be good!
