Disappointed in this dish because I thought the brisket would be soooooo tender, & it was not. I guessed at the weight of the meat & when I trimmed almost all of the fat off, I didn't even have 3 lbs.

Slow Cooked Smothered Brisket (from Recipe4Living.com)

1 (3-4 lb.) brisket, trimmed of fat
1 tsp. garlic powder
1 Tbs. cracked black pepper
1 green bell pepper, seeded & sliced into rings
1 onion, sliced into rings
1 (16 oz.) bottle Jack Daniels barbecue sauce

Place brisket in CP & season with garlic powder & black pepper. Top with green bell pepper & onion slices. Pour 1/2 of the barbecue sauce over brisket & cook on LOW for 8-10 hours Remove brisket from CP & slice or shred. Pour remaining 1/2 of barbecue sauce over all & let sit for 10-15 minutes before serving.

Serves 8

This is my 1st time to try this. Will come back tomorrow with opinion. Happy crocking!!

Save the Day Pantry Crock Pot Chili

A thick, fiber rich, and tasty slow cooker chili made with ingredients from the pantry

Minutes to Prepare: 5
Minutes to Cook: 360

Tips
Serve with a dollop of light sour cream or Greek yogurt and garnish of cilantro. Also good over a 1/2 cup serving of your favorite whole wheat pasta. Can cut the sodium by rinsing the canned beans other than those with chili sauce, using low sodium beans and corn.

Ingredients
1 3/4 cup dried Black Beans cooked or 15.5 oz can drained and rinsed
1 15.5 oz can Hanover Chili Beans in Chili Sauce
1 10oz can Rotel Diced Tomatoes with Lime Juice & Cilantro Rotel
1 Sweet potato 5" long peeled and cubed
1/2 cup Canned or Frozen Sweet Corn
2 Tbs Old El Paso Taco Seasoning Mix (40% Less Sodium)

Directions
Peel and cube sweet potato. Add to Crock Pot. Add other ingredients. Toss lightly and cook 6 - 8 hours. Enjoy.

"Jennie's Heavenly Slow Cooker Chicken" ---- recipe found on www.allrecipes.com.

Serves 4

2 T. butter
1 (7 oz) pke. Italian-style salad dressing mix
1 (10.75 oz) can condensed golden mushroom soup
1 (8 oz) container chive & onion cream cheese
1/2 c. dry white wine
4 skinless, boneless chicken breast halves

Melt the butter in a saucepan over medium heat, & stir in the salad dressing mix, mushroom soup, cream cheese, & wine until the sauce mixture is hot, smooth & well combined. Place the chicken breasts into the bottom of a slow cooker, & pour the sauce mixture over the chicken. Cover & cook on Low setting until chicken is tender, about 4 hours.

NOTE: I substituted chicken broth for the wine & only used 3 chicken breasts. My DH & I had 2 meals eating this over rice with some leftover. This would drop the caloric value somewhat. We really liked it.

Linda's Moroccan Style Lamb Stew

A nice sweet and savoury ethnic stew.

Minutes to Prepare: 20

Number of Servings: 8

Tips

This goes well served on top of rice, or with flat bread on the side.


Ingredients

2 pounds cubed lamb stewing meat.
2 medium sized onions, diced.
about 1/4 to 1/2 pound loose pitted dates, cut in half.
1/2 cup almonds, roughly chopped.
1 teaspoon salt (or to taste).
1/4 teaspoon fresh ground black pepper.
1 teaspoon ground ginger.
2 teaspoons ground cinnamon.
1 tablespoon honey.
1 teaspoon saffron.
3 tablespoons Canola oil.
about 2 cups water.
1 tablespoon sesame seeds.


Directions

1) Place everything into a medium size crock-pot. Give it a stir. (adjust water if needed. It should come to the top, but not quite cover everything.)
2) Set the crock-pot on low, and cook for about 7-8 hours.

Serving Size: divides into 8 servings.

This recipe was taken from www.recipe4living.com.

Today I am cooking a rotisserie chicken in my crock pot for the 1st time.

Roll up 4 balls of aluminum foil (about 1 to 1 1/2 inch in size) and put in bottom of crock pot. Set a whole chicken on top of the aluminum foil balls. Sprinkle seasoned salt, rotisserie seasoning and Cajun seasoning all over chicken. Cook on low for 8 hours.

Leftovers will be used for salads, possibly a casserole, etc.

NOTE: The chicken was really good, falling off the bones & flavorful. Don't know the caloric values, but must be like baked chicken since I did not use any oil or add any liquid to the CP. Now to make a casserole & chicken salad sandwiches. Yum.

liver and onions,

layer in crockpot as onions, mushrooms & bite size liver pieces floured then beef broth cover and cook on low 5-6 hours. makes it own gravy. do not forget to spray your crockpot. the liver was very tender. spices to your taste, only used salt and pepper.

Nope, they don't stick to the sides at all -- as long as you grease the inside of the slow cooker really well. Instead you get a nice crusty, caramelized surface. It's yummy! I hope you try it and let me know how it turns out for you.

That sounds really good! I think I'll try it. Do they stick to the sides and get to the "teeth-breaking" status? I found a recipe for putting steel cut oats and pearl barley (not quick-cooking) in a bowl, then setting the bowl in the crockpot overnight for a fast breakfast. I haven't tried it yet, and wanted to see how it turned out before I posted on it. I'm really glad you put this on here, tho--thank you! Rhonda

Since I'm new here I may have missed recipes like these...but does anyone make oatmeal in their Crock Pot? I just started doing this after hearing about it for ages. Steel cut oats work really well and it's great to have a healthy, hearty breakfast waiting on you when you get up. I've linked to some recipes I found below at a blog.

I made the Banana Coconut Milk one last night, modifying it a bit (mashed the bananas instead of slicing them, used 1 can light coconut milk, 1 can full of unsweetened vanilla almond milk, didn't add the butter). It came out so creamy and delicious and the 3/4 cup serving was incredibly filling. It didn't have a strong coconut taste, but that wouldn't have bothered me. I didn't add any mix-ins although I would've loved some macadamia nuts. The original recipe is about 275 calories, 8 g fat, 4 g fiber, 4 g protein, and 6 WW points per serving.

Slow Cooker Salisbury Steak (recipe found on www.allrecipes.com) The recipe is a little long to put on here, but not complicated.

It serves 8 & the nutrition information is also included at the bottom.

This was very good with lots of gravy. DH & I ate it over rice. It calls for cream of chicken soup & this was great, but next time I make it I think I will try mushroom soup as we really like this too.

Tried this one tonight and it was outrageously good.

Honeysuckle white turkey breast seasoned with sage, celery powder, Forward (like Mrs. Dash)
cracked pepper and then coated with sugar-free blackberry jam. Placed in crock pot and cooked for 4 hours with tons of root veggies. Poured 1/2 cup white wine and 1/2 cup Balsamic vinegar over meat and turned to low for another 3 hours. The potatoes completely disintegrated and it formed it's own gravy from the wine and vinegar - almost a sweet and sour flavor. There was no recipe for this. I just made it up as I went along.

Made Beef and Gravy in the CP today. Recipe is on www.food.com on page 5 by MelanieMag & is #276874. It is very easy & good over mashed potatoes, has all the nutrition facts too.

It calls for beef stew meat, but I never buy the stew meat already cut up....they charge too much....just buy a roast when on sale & cut it up yourself in the size pieces that you desire.

Stuffed Steak

1 nice size piece of boneless round steak
1 box of Stove Top Stuffing mix (or make your own)
1 can cream of mushroom soup undiluted
1 cup red or burgundy wine
baby portobello mushrooms chopped
fresh sage and thyme

Prepare stuffing mix and set aside. Chop and slightly brown mushrooms in a small amount of melted butter. Add to stuffing mixture. On a sheet of plastic wrap, pound steak so it is of equal thickness throughout. (I use my cast iron frying pan for this. It's faster and does a great job)
Lie your steak on the plastic and spread the stuffing mixture over it.
Grab the plastic wrap and, as tightly as possible, roll the steak using the plastic wrap to keep the stuffing tucked inside. Be sure, as you are doing this, that the wrap doesn't tear and end up inside the steak as well. When you reach the other end of the steak. Tuck the plastic wrap tightly around it and get three 10 inch pieces of butcher's twine. ( The meat department in any grocery store will sell you some of this) Untuck the wrap from one end at a time and tie the steak up tightly. Season with salt and pepper to taste.
Place in oval crock pot. Cover with soup and wine that you have mixed together. Top with
fresh thyme and sage ribbons (if desired) and cook on low all day.
Mine was on for nearly 8 hours. Remove from crock and let stand for 8 to 10 minutes. Slice
and you will see beautiful pinwheels of steak and stuffing. Cover with gravy and the fresh herbs. Amazing flavor. I served mine with dumplings but noodles, potatoes or rice would work too. It looks so elegant you could even serve this for a dinner party.

Yesterday I got 3 pieces of sliced pork loin (2 to 2 1/2 lb total) & cut in bite sized pieces, then browned. After I put this is the CP & added a sprinkle of black pepper, I added 1 can of cream of mushroom soup & about 14 oz of chicken broth to the pan, mixed & poured this over the meat already in the CP. Cooked on high for 3-4 hours. DH & I ate this over mashed potatoes.! Very good!
