Do not throw tomatoes at me! I used the microwave!

Microwave Fried Rice

3 cups white rice
3 cups water
Microwave 5 minutes. Let stand.

Whisk 5 eggs in bowl
Microwave 2 minutes. Stir. Microwave 1 more minute.

Open 2 cans of peas (Microwave 1 minute, optional)

Toss together and voila!

I threw in some carrots, potatoes, mushrooms and corn with water and beef bouillon cubes then will put some butter on top right before it is finished.

Today I made Cincinnati chili for dinner. I got the recipe on-line but simply use the chili recipe on the seasoning packet and use the spaghetti with it, sour cream and shredded cheddar cheese. It was delicious! One of my housemates gourged on it! The other housemate finds fault with everything.

Freezer to crock pot brunswick stew. I purchase quarters of it from the Ruritains as their winter fundraiser and put them in the freezer. They are great for busy nights just put a couple quarts in the crock pot to thaw and dinner is ready when you get home. Just cheese toast to go with it! YUM!

I started out trying to cook 7 beans and barley for the first time in the crock pot, I guess I added too much veg stock to it because there was lots of liquid left over, so I added a bunch of veggies and some quinoa pasta and it turned out to be a really great soup. By tomorrow the pasta will have puffed up and then it will resemble a stew I guess. But it was good.

Today I have a pork shoulder roast with a "Kitchen Sink Spice Rub" on it--otherwise known as the "I'm running late and these are the spices I've grabbed out of the cabinet" rub. ha I can't wait to get home and see how it turns out. I wish I'd taken time to throw a few foil-wrapped potatoes for baked potatoes in the other CP to go with it. Rhonda

thank you! I think I will try it later this week: I love lasagna and have most of the ingredients on hand. It looks like I just need to use significantly more liquid for it to work in the CP. Thanks for replying to my question

Hi LynetteMom,
You can put in uncooked, broken lasagna noodles to fit the crock pot (or your favorite pasta), your favorite sauce and a can of beef broth and about 2 cups of tomato juice (I use my MIL's home-made V-8 and it's really good). Layer these like normal in your CP, and cook on low for about 4 hours. Much longer and the pasta gets mushy. Hope this extremely stream-lined recipe helps! Rhonda
