I haven't made anything in the crock pot lately

For lunch we had rice, cold sliced roast with a vinaigrette, kale salad

For supper, I am going to my friend's place, so I don't know, but with her, there is bound to be a lot of vegetables.

I have some outdated milk, so decided to bake some homemade bread. It's a favorite recipe that uses milk & honey. I love the smell of bread rising/baking. I guess with all this talk of the next hurricane, baking something is helping to keep my mind busy. Each time I start to worry, I begin to pray. emoticon

I made Chicken Tikka Masala today. It was pretty good. I just buy the jar of Tikka Masala sauce, add onions or peppers and leave it in the crock pot with any kind (today I used legs) of chicken all day on low. We served it with naan bread and rice. This is an easy way to add something different to our rotation.

Found a recipe for "roast", but changed it to a smaller cut of beef (plus, cut it into cubes.) The veggies used were more than I usually would add: red onions, tiny red skinned potatoes, parsnip, mushrooms, & baby carrots. DH is not a fan of traditional roast, which is why I changed it a bit. He really liked it, altho, I was sorry I hadn't mixed it up better when adding into the crockpot. The meat was on top of it all & not covered by the beef broth that it all cooked in; which meant it was dry. I will make sure not to make that mistake, again.

After the whole moving process (and us still painting rooms), I'm not yet in the groove of cooking all the time. I had decided it was time to get back with it & do more cooking from scratch. We like those type of meals the best. I'll get back in gear, eventually.

I used the small crockpot for BBQ chicken.. It was the perfect size. I had 2 breast pieces & covered them with watered down BBQ sauce. Cooked it long enough to shred the chicken. Drained it, but added some of the BBQ sauce I'd saved back. Served with hamburger buns. This was a simple thing. The small crockpot was the perfect size for it.

Not at my house, but, sharing a story. BIL decided to buy himself a small crockpot & got a 2# roast. SIL likes all the veggies cut up small, so he did that as well. I hear it was yummy & she even had 2nds. Maybe I should explore more ways to use my small crockpot. So far, I've only fixed a warm spinach dip in it.....

Getting moved in & settled. The kitchen is taking shape. The very first thing I fixed, was a can of soup. It wasn't much, but, we were too tired for much of anything. Can't wait till I am fixing homemade soup, again, in the crockpot. Soon. Very soon. (It doesn't matter to me what season I fix it, either. LOL.)

That sounds really good!

We have been packing (for the move) today. After looking in the freezer & fridge, I realized that I had the fixings for some BBQ chicken (in the crockpot), red skinned potatoes, and asparagus. I'm wanting to use up what we have & was thrilled that I had enough for a nice meal. There are are few other goodies in the freezer, as well. We move in less than a week. I'd love to use up whatever foods are in the freezer, instead of having to move them.

good luck on the move, last night I had 1 chicken breast and 2 thighs and put them in the crockpot with the rest of some salsa and some Salsa Con Queso cheese and some kale. I woke up around 3 am and thought wow what smells so good, then I realized the crock pot was on. It was yummy when I ate it for lunch

emoticon for the encouragement! We've just emptied out a storage unit (after not seeing it for a year.) It was one of those small closets. I thought it would be a LOT harder to empty out, than it was. We donated some of it, then filled up our car & traveled. Oh my, I hated that part...but, we DID it. Let the moving commence! emoticon

I made fish & rice. Only, this time, I made it all a bit diff than my usual. Fish was nekkid & microwaved for 5 1/2 min. Rice was not the usual flavored rice mix that I like. I cooked up brown rice, then fried it with a couple Tbl butter, chopped garlic, chopped bell peppers (yellow, red, orange, green) & about 8 oz froz brocc flowerets. Didn't have a recipe, for the rice. Was just wingin' it. We were both happy with the results. About the fish, lately we've been getting 5 oz fresh salmon fillets. We were leary of trying the salmon (b/c of faint memories of the first times either of us tried it......several years ago.) Well, I'm happy to say that it's actually pretty good. I've always thought it had a kind of a steak flavor. I mentioned that to DH & he ended up agreeing with me. "It DOES taste kinda like steak!" emoticon

I've had a free eBook of slow cooker recipes & not actually browsed thru it, until recently. Decided to make out my grocery list, using a couple of the recipes.

Today was the first dish: "Healthy" Chicken Stroganoff (pretty sure that was the name.) One could use fresh chicken, boneless skinless. I took a quicker route & used a bag of frozen chicken fajita strips. They're not breaded & are kinda spicey. The other ingredients are 16 oz low fat sour cream, 1 can of Healthy Choice cream of chicken soup, and an envelope of onion soup mix. Put the chicken in crockpot, first. Mix the other ingredients in a bowl, together; then cover the chicken.

IF you're making this with raw chicken, the instructions are to cook on high for 3 hours, then low for 2 more hours. If using precooked chicken, as I did, having it on low for 3-4 hours is really all you need.

Original recipe says to cook up pasta, separately; and serve the chicken mixture over the noodles. I had some extra biscuits to use up, so mine was just a spoonful over a torn biscuit.

Calories are about 300-400 per serving; assuming that you're getting about 5-6 servings. I didn't calculate the noodles as part of the calories.

I think you could easily add some broccoli, to this & it would be delicious, as well. emoticon

One of my crockpot dishes, this week, is with lentils. Haven't had them in years, but, I remember liking them.

Lentil Sloppy Joes sounds intriguing. How do you make them? Do you only exchange the ground beef for lentils ? Do tell, please!

I may try the chicken and dumplings next week. I love soy sauce, but I can't have it often due to sodium. Today is another recipe from my Healthy Crockery Cookery book. Pork Chops with Minted Herb Relish sounds appropriate for the first day of spring.

Hubby & I have been sick. I fixed up some beef, broccoli, rice, & beef broth in the crockpot. I kept out the soy sauce, ginger & brown sugar (as I know hubby isn't crazy about soy sauce.) I'm used to adapting recipes & figured all would be fine. Perhaps its b/c of this cold (me barely having any taste buds, right now.) Anyway, the beef & broccoli turned out NOT to be a fave. I added extra salt & pepper to mine, which helped some. Won't be making this one, again. Guess one can't always be perfect. emoticon emoticon
It's actually a SP recipe & is prob very good (if one actually FOLLOWS the recipe.) It's called Better Beef & Broccoli.

Tonight we had leftovers of my SP's slow cooker chicken stew! Hubby wanted some cream of celery soup added and it worked out great! Tweaking the recipes for your family can be worth it!

I am FINALLY getting the northern beans soaked/cooked up, so I can make white chili. I have been thinking about it & talking about it for a couple weeks now. I decided it is time! emoticon This will be something that I freeze serving sized portions of b/c I am the only one at my house who eats spicy foods. emoticon

I've never done that (cooked the meat ahead, for various meals), but it sounds like a great idea. When one cooks the meat dry, about how long do you need to cook it for? I saw my mom make a roast (without adding any water) in the crockpot, once. I hadn't ever done that & was marveling at how well it turned out.

I put in 4 Lg chicken legs, atop crunched foil, to cook plain and dry. I will season the meat for various meals as needed. Then I added veggies, leftovers and rice + water and made soup.

I seasoned the soup right away, but held back so as to add some herbs &c, when I heat it up.

I'm a big fan of crockpots since my stroke, and then my recent major heart attack. It helps cut some of our costs too.

Today I am making fried rice for dinner! However, I would like to have a potato side dish. Do you have any good crockpot potato recipes? I would really like something different and easy. If you have a neat recipe, would you share it with me? Thank you!
