Please add yours. Here are two from Stephanie O'Dea, The Crock Pot Lady.

If you're a veggie, change the chicken broth to veggie broth, the sausage to TVP, tofu, or veggie sausage, and so on.

HOPPIN' JOHN
Hoppin' John is traditionally made on New Year's Day to bring good luck and prosperity throughout the entire calendar year (black-eyed peas, collards, sausage, rice). I've heard of this but never made it. I don't use rice, and I serve the greens on the side. This has the advantage of all-in-one-pot-simplicity.
