Here is Pioneer Woman's Hoppin John. She doesn't use a crock pot. I know, I know . . . we'll have to work on her.

If you're a veggie, change the chicken broth to veggie broth, the sausage to TVP, tofu, or veggie sausage, and so on.
Hoppin' John is traditionally made on New Year's Day to bring good luck and prosperity throughout the entire calendar year (black-eyed peas, collards, sausage, rice). I've heard of this but never made it. I don't use rice, and I serve the greens on the side. This has the advantage of all-in-one-pot-simplicity.
