I do that same thing when whole chickens go on sale . . . roasted with veggies, and then for a completely different taste I divide the leftovers, half into burrito filling, and in the summer, chicken salad with grapes and walnuts.
Last time I made traditional chicken soup with the other half . . . picked the carcass clean of meat, then cooked the bones with veggies overnight. Strain, add meat & veggies, to make the soup.
