Got this today in email from About.com. I haven't looked yet but it's probably already in SparkRecipes. I have a favor to ask; no pressure, only if someone's up for it. Anyone up for going on a scavenger hunt in SparkRecipes and try to find this exact recipe already there? Thanks alot, please do so and post it.

Corned Beef and Cabbage
6 to 8 medium potatoes, peeled and cut into thick (about 1/2-inch) slices
3 medium carrots, thinly sliced
2 ribs celery, thinly sliced
1 corned beef brisket, about 3 pounds
1 cabbage, about 2 pounds
1/2 teaspoon black pepper
1 1/2 cups water
Lightly butter or spray a 5 to 6-quart crockpot; layer potato slices over bottom of pot with carrots. Place corned beef on vegetables. Slice cabbage into 8 wedges and arrange around meat. Sprinkle with the pepper and add water. Cover and cook on LOW setting for 7 to 8 hours, until meat and vegetables are tender.
Remove meat to a platter; cover with foil and rest for 10 to 15 minutes before slicing.
Sorry no other info given such as nutrition or serving sizes of each eighth. Also my crockpots are old and slow; so I'll be slicing my potatoes thinner than 1/2 inch.
Also if I make the Kale Colcannon linked in a previous post below, which is a good way to get the #1 most highly nutritious veggie, kale, into your meal [not to mention an excellent way to impress the kiddos and let them have fun with their food via serving green mashed potatoes]; then I won't put any potatoes into my crockpot corned beef & cabbage, because they will already be in the Kale Colcannon. Up the low carb veggies, reduce the carb foods, in every meal! Greens are also highly alkaline, meaning good for your pH levels.
