Wow! I learned something new, great to know stir fry recipes turn out well in crock pot. I guess it would be similar to fajitas in the crock pot. The roast of course is an easy conversion . . . .

Orange Pork Roast

Number of Servings: 6
Serving Size: 3-4 oz

Ingredients
Name Measure Weight
pork loin roast --- 1 1/2 lb
low-calorie margarine 1/4 cup ---
sugar 2 tsp ---
low-fat, low-sodium chicken broth 2 cups ---
cornstarch or arrowroot powder 1/4 cup ---
Grand Marnier 1/4 cup ---
orange marmalade 1/4 cup ---
grated orange peel 2 Tbsp ---
cloves 1/8 tsp ---
orange slices 5 ea ---
fresh parsley 1 ea ---

Preparation Instructions
1 Preheat the oven to 375 degrees F. Place the pork roast on a roasting rack. Melt the margarine in a large saucepan and add the sugar. Combine the chicken broth and the cornstarch or arrowroot powder. Add to the saucepan and stir until thickened. Add the remaining ingredients except the orange slices and parsley. Cook for 2 minutes on low heat.
2 Brush one-half of the sauce over the pork. Roast the pork for about 60 minutes until there are no traces of pink. Heat the remaining glaze to serve on the side. Slice the pork and garnish with orange slices and parsley to serve.

Lemon Chicken Stir Fry.

chicken-flavored bouillon cube or 1 tsp. instant chicken bouillon granules 1 ea ---
vegetable oil 2 Tbsp ---
boneless, skinless chicken breasts, cut into strips --- 1 lb
garlic cloves, crushed 2 ea ---
cut up fresh vegetables, such as green onions, fresh mushrooms, carrots, red pepper, broccoli florets, snow peas, and celery 4 cups ---
Equal® Spoonful OR 3 packets Equal® sweetener 2 Tbsp ---

Preparation Instructions
1 For Lemon Sauce, combine vegetable stock, lemon juice, cornstarch, apple juice, soy sauce, chili sauce and chicken-flavored bouillon cube in small bowl until smooth. Set aside.
2 Heat oil in wok or frying pan over medium heat. Cook and stir chicken and garlic until chicken is no longer pink, about 10 minutes. Remove from pan; keep warm.
3 Add vegetables. Cook and stir about 3 minutes or until heated through.
4 Return chicken to pan; add Lemon Sauce until sauce is thickened and bubbling. Stir in Equal. Serve over rice, if desired.

Hawaiian Meatballs

Ingredients

onion, finely chopped 1 ea ---

quick-cooking oats 1/4 cup ---
large egg white 1 ea ---
pumpkin pie spice 1 tsp ---
dried thyme 1 tsp ---
salt 1/4 tsp ---
pepper 1/4 tsp ---
orange juice 1 1/2 cups ---
crushed pineapple packed in unsweetened juice, drained --- 8 oz
light soy sauce 2 Tbsp ---
firmly packed light brown sugar 1/2 Tbsp ---
ginger 1/2 tsp ---
salt (optional) 1/8 tsp ---


Preparation Instructions
1 Preheat the oven to 375 degrees F. In a large bowl, combine the ground beef, ground turkey, onion, garlic, oats, egg white, pumpkin pie spice, thyme, salt, and pepper. Mix well.
2 Roll the meat mixture into about 42 balls, and arrange on a large nonstick spray-coated baking pan. Bake in the upper half of the oven for 12 to 15 minutes or until browned, turning once during browning.
3 For the sauce, combine the orange juice, pineapple, soy sauce, brown sugar, ginger, and salt, in a 3-quart flame proof casserole. Heat the ingredients to a simmer.
4 With a large slotted spoon, transfer the meatballs to the sauce mixture, and simmer uncovered, stirring occasionally. Continue simmering for about 30 to 35 minutes, until the sauce has cooked down and thickened so that it coats the meatballs.
5 Serve at once, or cover and refrigerate. Meatballs will keep in the refrigerator for 3 to 4 days.

Crunchy Chicken-Cilantro Lettuce Wraps

Ingredients:
Sauce
3 tbsp (45 mL) reduced-sodium soy sauce
2 tbsp (30 mL) sugar
2 tbsp (30 mL) fresh lime juice
1 tbsp (15 mL) canola oil
1 tbsp (15 mL) water
1/2-1 (5-8 mL) orange zest
1/4 tsp (2 mL) dried red pepper flakes

Filling
2 cups (500 mL) bagged coleslaw mix
1/2 can/4 ounces (230 mL) sliced water chestnuts, drained and cut in half
1/2 cup (125 mL) frozen green peas, thawed
1 cup (250 mL) pre-cooked diced chicken breast
1/3 cup (80 mL) dry roasted peanuts, toasted
1/4 cup (60 mL) chopped fresh cilantro leaves
12 large Boston Bibb or romaine lettuce leaves
Makes 4 servings • Serving size: 3 lettuce wraps

Instructions:
1. Combine sauce ingredients in a small bowl and whisk until well blended. Combine filling ingredients in a medium bowl.
2. To serve, arrange three lettuce leaves on each of four dinner plates and spoon equal amounts of filling on top. Serve with sauce on side. Have people roll up their own lettuce wraps and dip into sauce.

1 Preheat the oven to 350 degrees F.
2 In a 9x13-inch baking pan or large casserole dish, spread half of the tomato sauce. Place the chicken on the sauce, and then pour the rest of the sauce over the chicken. Sprinkle the mozzarella cheese on the chicken, then sprinkle on the Parmesan cheese.
3 Cover and bake until bubbly and cheese is lightly browned, 30 minutes.

Apple Oatmeal Bars

1 1/4 cups all-purpose flour
3/4 cup quick or old-fashioned oats, uncooked
1/2 cup Equal® Spoonful*
1/2 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/8 teaspoon salt
1/2 cup cold stick butter
2 tablespoons water
1 teaspoon vanilla extract
3/4 cup apricot or peach spreadable fruit


1. Combine flour, oats, Equal®, cinnamon, baking powder and salt. Cut in butter with a pastry blender until mixture is very fine in texture and begins to stick together slightly. Stir in water and vanilla until well blended.
2. Reserve 3/4 cup flour mixture. Press remaining mixture firmly and evenly onto bottom of lightly sprayed 8-inch square baking pan. Bake in preheated 375°F oven 12 to 15 minutes or until mixture is lightly browned at edge.
3. Remove from oven and spread with fruit. Sprinkle with reserved flour mixture, pressing gently into fruit.
4. Bake an additional 20 to 25 minutes or until flour mixture is lightly browned on top. Cool completely on wire rack. Cut into squares.
5. Store in airtight containers at room temperature.
Makes 16 servings.
*May substitute 12 packets Equal sweetener

Apple and Thyme Chicken
(makes 4 servings)

2 whole boneless and skinless chicken breasts, about 1/2 pound (225 g) each, halved and all traces of fat removed
butter-flavored cooking spray
salt (optional) and freshly ground pepper to taste
1 medium Granny Smith or other tart green apple, cored and thinly sliced
1 shallot, minced
1 tablespoon (15 ml) fresh thyme leaves or 1 teaspoon (5 ml) crushed dried thyme
1/4 cup (59 ml) balsamic vinegar
fresh thyme sprigs for garnish


1. Preheat oven to 375°F (190° C). Rinse chicken breasts and pat dry with paper towels. Lightly spray a baking dish with cooking spray.
2. Sprinkle chicken breasts with salt (if using) and pepper. Place in a single layer in the prepared baking dish.
3. Arrange apple slices over and around chicken breasts. Sprinkle with shallot and thyme leaves; pour on the balsamic vinegar.
4. Bake for 15 to 20 minutes, until chicken is opaque throughout (cut to test). Arrange cooked breasts on a platter and spoon apples and cooking juices on top. Garnish with thyme sprigs, if desired. Serve at once.
Per Serving: 163 calories (9% calories from fat), 27 g protein, 2 g total fat (0.4 g saturated fat), 9 g carbohydrate, 1 g dietary fiber, 66 mg cholesterol, 78 mg sodium

Crock Pot Chicken Cacciatore

3 lbs. bone-in chicken thighs, skin removed
14 oz. can diced tomatoes with Italian seasoning
6 oz. can tomato paste
½ cup chicken broth
1 onion, sliced
3 cloves garlic, minced
2 green bell peppers, chopped
¼ cup dry red wine
1/8 teaspoon pepper
¼ teaspoon salt

Place all ingredients in 3-4 quart slow cooker. Cover and cook on low 6-8 hours until chicken is thoroughly cooked and tender. Serve with hot cooked pasta, if desired. Makes 6 servings.


Crock Pot Chicken Chowder Recipe

½ cup chopped carrots
1 cup skim milk
1 cup low sodium chicken broth
1/8 teaspoon white pepper
1 onion, chopped
2 cloves garlic, minced
1 potato, peeled and cubed
½ lb. boneless, skinless chicken breasts, cut into 1" pieces
2, 15 oz. cans creamed corn
¼ cup dried potato flakes
½ cup grated Parmesan cheese

Combine all ingredients except dried potato flakes and cheese in slow cooker. Cover and cook on low for 5-6 hours or until potatoes are tender and chicken thoroughly cooked. Add potato flakes and stir well to combine.
