Turkey Meatballs with Grape Sauce

Meatballs:
1 lb ground turkey
1/2 cup breadcrumbs
1/2 cup buttermilk (I use low fat)
2 egg whites, beaten
2 tablespoons fresh sage, finely minced
1/2 teaspoon salt
Pepper
Non-stick cooking spray

Sauce:
1/2 cup low-carb ketchup (like Nature’s Hollow)
1/2 cup sugar-free grape jelly (like Smucker’s)
2 tablespoons balsamic vinegar

Directions:
Preheat oven to 375 degrees.

In a large bowl combine all meatball ingredients. Shape meat mixture into 1” meatballs and place on a baking sheet sprayed with non-stick cooking spray. Do not allow meatballs to touch. Bake in oven for 20 minutes until meatballs are cooked through.

In the meantime combine sauce ingredients in the bowl of a slow cooker set on low. When meatballs are baked add to slow cooker discarding pan juices and drippings. Stir to coat meatballs with sauce. Cover and cook on low 1-2 hours prior to serving. Provide cocktail picks for spearing meatballs.

Serving size, 3 meatballs. 150 calories, 3.5 grams fat, 9 grams lean protein.

Macaroni & Cheese Crock Pot Recipe

8 oz dried macaroni noodles, cooked according to instructions
3-4 cups grated cheddar cheese (set 1 cup aside)
13oz can evaporated milk
1 1/2 cups milk
2 eggs
1 tsp salt
1/4 tsp fresh ground black pepper
1/2 tsp dry mustard

Combine all ingredients except 1 cup of cheese in crock pot. Then add extra cup of cheese on top. Cover and cook on low for 3-4 hours.

Pizza Rigatoni Crock Pot Recipe

1 1/2 lbs bulk pork sausage
3 cups rigatoni, cooked about half way to al dente
4 cups shredded mozzarella cheese
10 oz can cream of mushroom soup
1 small onion, sliced
15 oz can or jar pizza sauce
8 oz can or jar pizza sauce
3-4 oz package pepperoni, sliced
6 oz can sliced olives

Fry sausage in frypan and drain. Place halt the sausage amount in slow cooker. Then layer as follows using half the ingredients: pasta, cheese, soup, onions, pizza sauce, pepperoni, and olives. Repeat. Cook on low 4 hours.

This is one is one of my kids favorites and I have to that are very picky eaterys.

Crock Pot Pizza Chicken Recipe

Ingredients
• 4 skinless, boneless chicken breast halves - cut into bite size pieces
• 1 onion, chopped
• 1 green bell pepper, chopped
• 1 (10.75 ounce) can condensed tomato soup
• 1 (10.75 ounce) can condensed cream of mushroom soup
• 2 tablespoons tomato paste
• 1/2 cup water
• 1 tablespoon dried parsley
• 1 tablespoon dried oregano
• 1 tablespoon dried basil
• 1 bay leaf
• salt and pepper to taste

Directions
1. Place chicken, onion, bell pepper in a slow cooker.
2. In a medium bowl combine the tomato soup, cream of mushroom soup, tomato paste, water, parsley, oregano, basil, salt and pepper.
3. Mix well and pour mixture over chicken and vegetables in slow cooker.
4. Stir to coat and add bay leaf.
5. Cook on Low setting for 8 hours, until chicken and vegetables are tender.
