Stuffed Green Pepper Soup

1 lb extra lean ground beef, browned, drained and rinsed.
1 large onion, chopped
2 green peppers chopped
2 cans diced tomatoes
2 cans tomato sauce
1 can beef broth
1 cup cooked white rice
Salt and Pepper to taste



Directions
Put all ingredients into a slow cooker for 6-8 hours.

Number of Servings: 6

bean soup....lima beans;;red beans;;black beans;;pinto beans;;any bean you like .about a handful and a half of each kind
add diced onions;little garlic;;
you can add either ham hocks;;bacon chunks;;or a ham bone.anything like that for flavor

Lentil and Barley Stew

1 cup lentils
1/3 cup pearl barley
1 cup carrots (chopped)
1 cup celery (chopped)
1 cup onions (chopped)
2 garlic cloves (minced)
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1 bay leaf
3 1/2 cups broth
2 1/2 cups water
14 1/4 ounces Italian-style tomatoes or regular stewed tomatoes or crushed tomatoes
1/4 cup fresh parsley, finely chopped (optional)
2 tablespoons cider vinegar (optional


Sort through lentils to remove debris and shriveled beans, then rinse.
Add lentils to crock pot, along with barley, carrots, celery, onion, garlic, dried herbs and bay leaf.
Pour in broth, water, and tomatoes.
Cover and cook on low heat for 12 to 14 hours, or on high heat for 5 to 6 hours.
Discard bay leaf and just before serving stir in parsley and vinegar (if using.).

Crockpot Taco Soup

1 (16 ounce) can pinto beans
1 can white beans or kidney beans
1 (11 ounce) can niblet corn
1 (11 ounce) can Rotel tomatoes & chilies
1 (28 ounce) can diced tomatoes
1 (4 ounce) can diced green chilies
1 envelope taco seasoning mix
1 envelope hidden valley ranch dressing mix
1 lb shredded chickens, ground beef or any meat


Cook meat and drain.
Shred if needed.
Add all ingredients to crockpot.
DO NOT DRAIN CANS.
Stir.
Cook on high for 2 hours or low for 4 hours.
Keep on low until serving to keep hot.
Garnish with sour cream, shredded cheese, chopped green onions, or tortilla chips.

Fragrant Brown rice and mushroom soup

3/4cup long grain brown rice
6 ounces mushrooms, finely chopped
1 medium onion finely chopped
1 large celery stalk finely chopped
1 tsp ground mustard
1 tsp ground black pepper
1/2 tsp salt
1/4 tsp ground coriander
1/8 tsp ground cardamon
1/8 tsp ground cinnamon
1/8 tsp ground cloves
6 cups beef boullion or stock
1/3 cup chopped fresh cilantro
1/4 cup nonfat plain yogurt
3 tbsp finely chopped green onions, including some tops

combine all ingredients, except clinatro,yogurt and green onions, in a 3 1/2 quart slow cooker.
cover and cook on low 5 - 6 hours or until rice is tender.
stir in chopped cilintro.
ladle into soup bowls and garnish each with a dollop of yogurt and choppen onion.
