Slow Cooker Cajun Chicken, Sausage & Rice
This slow-cooker, flavor packed meal is great any time of the year
because it cooks all through the workday without heating up the kitchen.

Prep Time: 10 minutes
Cook Time: 8 hours and 20 minutes

Makes 12 servings

6 chicken thighs (about 2 pounds)
1 pound lean smoked sausage, cut in 1-inch pieces
2 green bell peppers, coarsely chopped
2 medium yellow onions, coarsely chopped
1 cup sliced celery
1 can (14 1/2 ounces) diced tomatoes, undrained
2 teaspoons chicken-flavored bouillon granules
4 McCormick® Bay Leaves
1 teaspoon McCormick® Thyme Leaves
1 teaspoon McCormick® Garlic Powder
1/2 teaspoon McCormick® Ground Black Pepper
2 cups instant rice

1. Rinse chicken and pat dry. In a 3 1/2 or 4-quart crockery slow cooker,
place sausage, peppers, onions, celery, tomatoes, bouillon, bay leaves,
thyme and garlic powder. Stir to blend well.
2. Top with chicken and sprinkle with black pepper. Cover and cook on LOW
for 8 hours or until chicken is done and vegetables are tender.
3. Add rice; stir gently, yet thoroughly to blend. Cover and cook 15-20
minutes or until rice is tender. Remove bay leaves and chicken bones
before serving.

SLOW COOKER 3 WAY TEX MEX CHICKEN FILLING

You can use this filling in tacos, burritos, and quesadillas.

14.5 oz can diced tomatoes with jalapenos, drained
1 1/4 cups salsa verde
1 tbs ground cumin
3 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper
3 pounds boneless skinless chicken thighs
1 each large red and yellow bell peppers, sliced
1 medium onion, sliced
14.5 oz can black beans, drained, coarsely mashed
14.5 oz can corn, drained
FOR TACOS---
12 hard taco shells
3/4 cup shredded Monterey Jack cheese
1 avocado, thinly sliced

In a slow cooker, combine tomatoes, 3/4 cup salsa, cumin, garlic, salt and pepper. Add chicken, peppers, and onion, stir to coat. Cover and cook on high for 3 1/2 hours. Remove chicken from slow cooker to a cutting board and let cool slightly.

Strain mixture over a bowl, set liquid aside. Return vegetable mixture to slow cooker, stir in beans and corn. Cover and cook on high 10 min. Shred chicken and stir back into slow cooker with remaining salsa and 1 cup reserved liquid.

FOR TACOS---Set aside half the mixture. Heat shells according to package directions. Divide mixture among shells, top each with 1 tbs cheese, and 2 avocado slices. MAKES 7 CUPS OF CHICKEN FILLING.*

New Orleans Chicken recipe for your slow cooker



INGREDIENTS:

12 oz. boneless skinless chicken breasts
1 1/2 C. green peppers, chopped
1 medium onion, chopped
2 stalks celery, sliced
4 cloves garlic, minced
1 14 oz. can whole tomatoes
1/3 C. tomato paste
1 0 oz.chicken or veggie broth
1 Tbs. parsley
1 1/2 tsp. basil
1/2 tsp. oregano
1 tsp. Tabasco sauce
1/2 tsp. cayenne pepper
1/2 tsp. salt
1 lb. shelled shrimp
3 cups cooked rice



DIRECTIONS:

Cut chicken into 1 inch pieces. Put all ingredients (except shrimp and
rice)
in crockpot. Cover; cook on low for 8 hours. Add shrimp the last 20
minutes
of cooking. Stir in rice before serving. helps on those cold nights .

Crockpot Spicy Chicken Thai Noodle Soup

yield: 12 servings.

5 cups chicken broth
1 cup white wine
1 cup water
1 onion, chopped
3 green onions, chopped
3 cloves garlic, chopped
4 large carrots, cut into 1 inch pieces
4 large stalks celery, cut into 1 inch pieces
1/2 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon curry powder
1/2 tablespoon dried sage
1/2 tablespoon poultry seasoning
1/2 tablespoon dried oregano
1 teaspoon ground cayenne pepper
2 tablespoons vegetable oil
3 skinless, boneless chicken breast halves - cut into
1 inch cubes
1 fresh red chile pepper, seeded and chopped
1/2 (12 ounce) package dried rice noodles

In a slow cooker on low heat, combine chicken broth,
wine, water, onion, green onion, garlic, carrots,
celery, salt, black pepper, curry, sage, poultry
seasoning, oregano and cayenne.

In a skillet over medium heat, cook chicken in oil
until brown. Stir into slow cooker.

Cook soup 8 hours on low or 5 hours on high

About halfway through the cooking time, stir in the
red pepper 15 minutes prior to serving, stir in the
noodles.

Crockpot Sesame Seed Chicken

2 1bs. skinless, boneless chicken thighs.
1/2 c. low sodium soy sauce
1/3 c. packed brown sugar
1/4 tsp. garlic powder
1/4 tsp. ground ginger
1 tablespoons ketchup
2 tablespoons toasted sesame seeds

Place chicken thighs in the slow cooker. Whisk together remaining
ingredients in a bowl and pour over chicken.

Cover and cook on low 6 to 8 hours or on high 3 or 4.

Serves 4 to 6

Crockpot Deviled Chicken

3 lb chicken breasts or chicken legs or chicken thighs
1/4 c. butter, melted
1/2 c. honey
1/4 c. prepared mustard
3 clove garlic, minced
1 tsp salt
1/2 tsp curry powder

Place chicken in slow cooker. Combine all remaining ingredients and
pour over chicken. Cook for 4 to 6 hours on high or 6 to 8 hours on
low.

CROCKPOT CHICKEN AND RICE CASSEROLE

4 chicken breasts
1 can cream of celery soup
1 can cream of chicken soup
1 can cream of mushroom soup
2 stalks celery, diced
1 bay leaf
1 large onion, chopped
1/2 teaspoon Bell's Poultry seasoning
3 cloves garlic, minced
1 cup Minute Rice

Mix the cans of soup with the rice at the bottom of the Crockpot. You may substitute the type of soup you use in any combination (for example: 2 cans cream
of chicken soup and one can celery soup).

Add the diced celery, onion, and garlic and stir. Submerge the chicken in the soup.

Turn heat to high for 10 minutes, then reduce to medium and cook for 4-5 hours. Or cook on high for 3-4 hours. Enjoy.

Chicken and Dumplings

Serving Size : 8
4 points each

Here's one I found that uses biscuits:

1 pound Boneless skinless chicken breasts OR chicken breast tenderloins- - cubed
2 cans 98% fat free Cream of Chicken Soup
1 Onion- rough diced
2 1/2 cups Water (2 soup cans)
1tablespoon chicken broth and seasoning mix
1 pound red potatoes -wedged
1/2 pound carrots - sliced thick
2 stalk celery-sliced thick
1 cup frozen peas
1 teaspoon poultry seasoning
1 tablespoon dill weed
S&P to taste

7 1/2 ounces Pillsbury Buttermilk Biscuits (I use John Doe's biscuits - works fine)
2 tbls cornstarch

Combine all ingredients, except biscuits & cornstarch, in crockpot. Cover; cook on low for
5 to 6 hours. 30 minutes before serving mix cornstarch with 1/3 cup water and whisk into
crockpot. Tear each biscuit into 4 pieces. Add to crock pot mixture; stir gently. Turn
crockpot setting to High. Cook for an additional 30 minutes or until biscuits are fluffed up
and cooked through to the center.

Chicken and Creamy Red Potatoes
1-1/2 lbs Red Potatoes chunked
8 oz Neufchatel Cheese
10-3/4 oz Cream of Potato Soup
1 Envelope Ranch-style Dressing Mix
12 oz Chicken Breast Without Skin -- cut into strips

Place potatoes in slow cooker. Beat together the cream cheese, soup
and salad dressing mix. Stir in chicken strips and spread over
potatoes (or just stir all together). Cover and cook on Low 8 hours,
or until potatoes are tender. Stir once after 5-6 hours. Stir before
serving.

Busy Day Crockpot Chicken and Rice (3.5 PTS)


1 LB boneless skinless chicken breasts
2 cans 98% fat-free cream of chicken soup
1 can 98% fat-free cream of mushroom soup
1 box chicken flavor rice-a-roni

Put chicken and soups into the crockpot, turn on low
for 8-10 hours. When you get home, cook the rice
according to package directions. Serve the chicken
and gravy over rice.

I'm back after looking at how I started this time last year and dropped out. Cooking for the family and working all day is what makes it difficult to lose weight. I love yoga and the elliptical as far as exercise goes. I need to find the time to do it though because I work during the day and then run my kids around to their sports after work. I cook on Sundays and freeze some meals during the week. Any tips on meals that I could make ahead that the family would enjoy but aren't high in calorie?

Since its 3 below outside - easy Chicken soup

2-3 lbs of diced chicken breast
1 cup fresh mushrooms
1 cup chopped onion
1 cup cut carrots
1 chopped red bell pepper
1 cup chopped celery
6 cups chicken broth
2 T crushed red peper
salt and pepper to taste

Excellent soup, easy to add or sub your own veggies!

Here is my all time favorite crockpot dish! The frozen crawfish really kick it up! Enjoy!

Crock Pot Jambalaya

3 boneless, skinless chicken breast halves (about 4 oz. ea) cut into 1-in. cubes
6 oz. turkey sausage, cut into 1/4 in. slices (I use any type of sausage link)
1 cup spaghetti sauce (I just use the stuff in the jar, Healthy Choice of course)
1 1/2 to 2 teasp. Creole or Cajun seasoning
2 large tomatoes, chopped (2 cups)
1 large onion, chopped (1 cup)
2 stalks celery, chopped (1 cup)
1 can (14 1/2 oz.) chicken broth
1 cup uncooked regular long grain rice

Mix all ing. except rice in crock pot. Cover and cook on low 6 to 7 hours. Stir in rice. Cover and cook on low 45 minutes longer or til rice is tender. You could also add some shrimp, crawfish, or fish a few minutes before turning off pot.

I love adding a bag of frozen crawfish to this dish when I get home from work.
This is a favorite, and I often serve it to company that has traveled all day! Goes great with cornbread.

Garlic Chicken Alfredo in the Crock Pot

1 jar (16 ounces) Creamy Garlic Alfredo Sauce, or Alfredo Sauce
4 to 6 boneless chicken breast halves
1 can (4 ounces) sliced mushrooms, drained
8 ounces spaghetti, hot cooked
grated Parmesan cheese

Pour about 1/3 of the sauce into the slow cooker. Place chicken in the slow cooker; top with mushrooms and remaining sauce. cover and cook on LOW setting for 6 to 8 hours. Serve with hot cooked spaghetti, Parmesan cheese and a tossed salad.
Serves 4 to 6.

• I only cooked my chicken for 4 hours. It was very tender, juicy and not at all dry.
• I used a large can of mushrooms, stems and pieces instead of a small can.
• I cooked the entire package of spaghetti.
• This meal fed my family of 4, and then I froze the rest for another day.

To serve this, I “chunked” the chicken in the gravy and served over the pasta. Our side dish was a Caesar salad.

To freeze the rest, I simply mixed the left over pasta with the chicken and gravy.

Enjoy!

Spicey Thighs for the crockpot

1 large package chicken thighs with skin on
Two cans pinto beans, rinsed and drained
Two small cans chopped green chilies as hot or mild
One small can Chipotle chilies, drained (optional)
1 pkg dry chicken gravy

Place all ingredients in crock pot in above order
Then cook on low 8 to 10 hours.

You will love love love this dish! It is spicier than my husband! Enjoy.....

I'm throwing this in the crockpot today:

6 split boneless skinless chicken breasts
1/4 cup honey
1/4 cup maple syrup
1/4 cup unsweetened apple juice
1 tablespoon soy sauce
1 tablespoon poultry seasoning
1 tablespoon herbes de provence

I usually place the chicken in first, and mix everything else together in a bowl and pour it over the top of the chicken. Cook on low 8-12 hours (depends if the chicken is frozen or not) or on high for 4-6.

I am trying a new thrown together recipe for chicken soup =)

4 chicken thighs
2 chicken bullion
1 can chicken broth
dash of garlic, onion, celery powder
dash of oregano leaves
dash of Ms Dash
Pepper (course)
3 cups water
2 cups No yoke egg noodles
1 potato (diced)

Put chicken, spices, broth, water in crock pot in the morning

around 3 pm put in the potato
around 4 pm put in egg noodles

Season to taste...

Hope it turns out good =)I will let you all know tonight =)

This is cooking in my crockpot right now!

Cheesy Crockpot Chicken
Olive Oil Cooking Spray
6 chicken breasts
4-5 Garlic cubes
1 Onion (diced)
1 can Cream of Chicken soup
1 can Chicken broth
1 can cheddar cheese soup
2-3 Cups fingerling potatoes (cut in half if neeeded)
1/2 Cup mini carrots (cut in thirds
1/2 Cup chopped celery

Spray pot with the olive oil spray and preheat on high.
Throw everything in your pot, cook 1 hour on high, switch heat to low and cook 6-7 more hours! Great with brown rice or whole wheat pasta!

My husband and I love to make this! And there is plenty of leftover!

Salsa Chicken

4 item chicken breast, boneless
14 oz canned black beans
14 oz canned yellow corn
1 1/2 cup salsa

Throw in crock pot. Cook 8 hours on low. Shred chicken with a fork and serve. We like to put it over rice but you could also put it on a baked potato.

I make one that's really simple and tasty. Usually there's enough left over for hubby and I to eat some for lunch.

CrockPot Creamy Veg Chicken
(makes 4 small servings or 2 moderate servings)

4 Chicken breast halves
1 bag of frozen stew veggies
1 can of mushroom soup
1 teaspoon cayenne pepper
2 teapsoons oregano
1/2 cup water

*Open soup can and combine soup and water in a bowl; add pepper and oregano; mix until smooth
*Drop frozen veggies into crockpot
*Put chicken breasts on top of veggies
*Pour soup mixture over chicken and veggies
*Set crockpot on low and cook for about 8 hours
*Serve in deep bowls
*For an extra creamy taste put a teaspoon of lite sour cream on top or a 1/4 cup of shredded 2% milk Mexican Cheese (Kraft makes a good one).

I set this one up in the morning before work and get home to a house that smells fabulous. Add different spices to customize the taste :)

the Crockpot Rotisserie Chicken is one of my favorites. I use ALL skinless, boneless chicken breasts, and cook seceral pounds at a time, then weigh and freeze (3-4 ounces in a sandwich bag, then all baggies in a freezer bag) so I always have some in the freezer to thaw and put on a salad, or just for a main dish. I do make sure each serving has some juice in it, and a serving thaws in a microwave in under a minute.

One of the easiest recipes, and most of you probably have tried it is: Shredded BBQ sandwhiches: place chicken tenders or other boneless chicken in the bottom of crockpot. Pour bbq sauce over top until just covered. Cook about 6 hours or until chicken is easily shredded and no longer pink. Place on top of whole wheat buns. Yum! Great for picnics or crowds during the summer!

Even if you are on the right track, you'll get run over if you just sit there

Sesame Chicken

6 boneless skinless chicken breasts
1/4 cup honey
1/4 cup soy sauce
1/2 cup water
1 tablespoon cornstarch
1 teaspoon ground ginger
1 teaspoon red pepper flakes (optional)
1 tablespoon toasted sesame seeds


Cut chicken breast into 1 inch strips.
Heat a large non-stick skillet that has been sprayed with Pam, over medium-high heat.
Cook chicken strips for about 6 minutes until no longer pink.
Mix together honey, soy sauce, water, corn starch, ginger and red pepper flakes.
Whisk until no corn starch lumps appear.
Pour sauce mixture into skillet with chicken.
Cook until sauce thickens slightly.
You can add more water if sauce is too thick.
Sprinkle with sesame seeds.
Cover and simmer for 10 minutes or until chicken starts to soak up the sauce.





Really satisfies your craving for Chinese Food, and only 199 calories per serving

Salsa Chicken

4 boneless skinless chicken breast halves
4-5 teaspoons taco seasoning mix
1 cup salsa
1-1 1/2 cup shredded cheddar cheese
2 tablespoons sour cream (optional)


Preheat oven to 375 degrees F (190 degrees C).
Place chicken breasts in a lightly greased 9x13 inch baking dish.
Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly.
Top with sour cream if desired, and serve.

2-3 pounds chicken
1 can of cheddar cheese soup
2 cans of cream of chicken soup
2 tablespoons of garlic powder or 2-3 cloves of minced garlic

-Combine in crockpot & cook on low 7-8 hours
-Serve over rice or egg noodles

Pizza Spaghetti:

(Use your own judgement for amounts)

Put chicken breasts in slow cooker; add chopped green pepper, sliced mushrooms, sliced pepperoni; top with spaghetti sauce. Cook on low 8-10 hours. Top with grated mozzarella cheese; cover and let melt. Serve over whole wheat spaghetti.

You can add any toppings you would normally like on a regular pizza.

I made a chicken sausage & veggie soup tonight (from what I could find in the fridge and freezer. It came out really good! The recipe is posted on sparkrecipies if you're interested. Do a search under "soups" for Chicken Sausage & Vegetable Soup.

Crockpot Rotisserie Chicken

1 Whole Chicken
Olive Oil Cooking Spray
Lawry's Seasoned Salt (no substitutes)
Aluminum foil

Clean chicken inside and out. Spray with olive oil spray. Sprinkle with
Lawry's. Spray inside of crockpot with cooking spray. (Do not put any
water in the crockpot). Roll some wads of aluminum foil into balls and
put them in the bottom of the crockpot. The chicken is going to sit on
these. Put chicken back side down in crockpot on top of aluminum balls.
Cook on High (will not come out the same on low), 4-6 hours.

1 ounce of cooked chicken with the skin removed equals 1 WWP. You'll
need to weigh the chicken before serving to figure out how many ounces
you have.

Stuffed Chicken

6 boneless chicken breast halves
6 thin slices ham
6 thin slices Swiss cheese or other
1/4 to 1/2 cup flour
8 ounces sliced mushrooms
3/4 cup chicken broth
1/4 cup dry white wine
1/4 teaspoon dried rosemary, crushed
1/4 cup grated Parmesan cheese
2 teaspoons cornstarch
1 tablespoon water
1 teaspoon Gravy Magic or other browning sauce
salt and pepper, to taste

Place chicken breasts between sheets of wax paper or plastic wrap; pound to flatten. On each chicken breast, place a slice of ham and a slice of cheese; roll up and secure with toothpicks. Dredge the chicken rolls in flour. Place mushrooms in slow cooker then top with chicken rolls. Combine chicken broth, wine, and rosemary; pour over chicken. Sprinkle with the Parmesan cheese. Cover and cook on LOW for 6 hours. Remove chicken to warm platter. Combine cornstarch, water, and gravy browning sauce; stir into chicken cooking juices and stir until thickened. Add salt and pepper to taste; pour sauce over chicken rolls.
Serves 6.

Put a whole chicken in crock pot with chicken broth and water (try diff amts) and a 1/2 - 1 cup of red wine. cook 8 hours on low. If you like add herbs inside cavity. Chicken should be defrosted completely first or won't be done when you get home.

Easy Chicken Recipe

INGREDIENTS:
1 chicken, cut up, about 3 to 4 pounds chicken parts
2 tbsp. melted butter
Salt and pepper
2 tbsp. dry Italian salad dressing
1 can cream of mushroom soup or cream of celery soup
6 ounces cream cheese, cut in cubes
1/2 cup dry white wine or sherry
1 tbsp. finely chopped onion
PREPARATION:
Wash chicken and pat dry. Brush with butter and sprinkle with salt and pepper. Place chicken pieces in crockpot. Sprinkle dry salad mix over chicken. Cover and cook on low 5-6 hours. About 1 hour before serving, mix soup, cream cheese, wine and onion in saucepan.


Cook until smooth. Pour over chicken; cover and cook for 30 minutes longer. Serve with sauce. Serve with rice or noodles.
Serves 4 to 6.

Crockpot Mexican Beans

Estimated Times:
Preparation Time: 10 mins
Cook Time: 310 mins

Servings: 6


Ingredients


6 strips bacon
1 (15.5-oz.) can kidney beans drained
1 (15.5-oz.) can lima beans drained
1 (16-oz.) can pork and beans
1 onion peeled and chopped
1/2 cup sugar
1/3 cup firmly packed brown sugar
1 tablespoon chili powder
2 teaspoons CROSSE & BLACKWELL Worcestershire Sauce


Directions


Cook bacon in a skillet until crisp. Drain on paper towel and chop.

In a slow cooker, combine kidney beans, lima beans, pork and beans, onion, sugar, brown sugar, chili powder and Worcestershire sauce. Stir in bacon and cook on low for 5 to 8 hours following manufacturer's instructions.

roasted chicken with rosemary and garlic

1 (4-to 5-lb) roasting chicken
8 small sprigs of fresh rosemary
4 cloves of glarlic halved
---------
remove excess fat from chicken. remove giblets from chicken and refrerate for another use.
rinse and drain chicken.
starting at neck cavity and carefully loosen skin from breast with your fingers or a knife by gently pushing between the skin and meat.
insert 2 garlic peices and 2 rosemary sprigs under breast skin at edge of wings.
continue pulling sking and insert 2 rosemary and 1 garlic peices under drumstick skin.
make a small slit in skin on eash wing. insert a garlic peice an a sprig into each. insert 2 garlic peices and 2 rosemary sprigs in body cavity.
tie legs together and wings close to body.

place chicken, breast side down in a 4 or 5 quart slow cooker.
cover and cook on low 6 to 7 hours or until juices are clear when thich part of chicken is peirced with a knife.

remove chicken from slow cooker and discard garlic and rosemary. cut chiken into indivisual peices and serve..
