Quick Pork Chop and Apple Bake
1 package (12 ounces) frozen harvest apples, ( Stouffer's ), thawed
1 tablespoon brown sugar, optional
1/4 cup apple juice, broth, or water
1 box (6 ounces) Stove Top Stuffing, cornbread or herb seasoned
1 2/3 cups hot water
1/2 cup golden raisins or dried cranberries
4 pork chops, about 1/2 to 3/4 inch thick
Salt and pepper
1 tablespoon olive oil
Heat oil over medium-high heat in a large skillet. Sprinkle chops with salt and pepper; brown for 2 to 3 minutes on each side.
Heat oven to 350°. Lightly grease a 3-quart baking dish. Spread apples over the bottom of the pan, sprinkle with brown sugar, and pour juice or broth over all. Arrange the browned chops over the apples.
In a bowl, combine the stuffing mix, hot water, and raisins; stir until well moistened. Spoon stuffing mix over the chops. Cover tightly with foil and bake for 40 minutes, or until pork is tender.
