Virtually every meal I make these days is in the crock pot. Most of my recipes have come from the cook book "Fix it and Forget it Lightly." The recipes are good and every recipe contains nutritional info.
Last night I even made a meatloaf in the crock pot. Couldn't tell it hadn't been baked in the regular oven and my daughter inhaled 3 pieces of it.
Most of the recipes are simple enough that you can put the ingredients together earlier in the week, freeze it and then just throw it in before you leave in the morning. It's been working great for me.
