I an new to this group and was scanning the discussions and came across this one. I thought I would add my version of this type of soup for you. I got it from my son who got it from his Korean friend. Hope you enjoy and it is not 1000 calories either,
Slow Cooked Korean-Style Short Rib Soup
Serving Size: 14
3 pounds short ribs
8 cups water
3 beef bouillon cubes
1/2 cup soy sauce
1 tablespoon worcestershire sauce
3 packages Splenda
6 green onions -- thinly sliced (reserve green parts)
2 tablespoons grated ginger root -- more if you like
1 tablespoon sesame oil
3 cloves garlic -- minced
1 teaspoon red pepper flakes -- or as much as desired
10 cups water -- added later
7 Ounces rice noodles
1/2 cup grated carrot
1/2 English cucumber -- thinly sliced
1/2 daikon -- thinly sliced
1/2 cup chopped cilantro
You can greatly reduce the amounjt of fat in this recipe if you cook the meat the day before and allow the broth to chill so you can remove the fat.
Remove any silver skin from the surface of the short ribs, and then make 2 cuts across the grain, through the meat down to the bone. Put the ribs in the slow cooker.
Dissolve the boullion cubes in water.
Whisk together allo the remaining ingredients for the Ribs and pour over the ribs. Cook on high for 6 to 8 hours.
Remove ribs from cooker and allow to cool.
When ribs are cool, cut meat from bones and return to broth.
Pour broth into a container and refrigerate overnight or use a fat seperater.
About 30 minutes before serving, put the rice noodles in a bowl with hot water to cover. Soak until tender and pliable, about 30 minutes.
Divide the noodles among shallow bowls and ladle the broth over top. Divide the meat evenly among the bowls. Garnish as desired with the carrots, cucumber, cilantro, lime and the remaining green parts of the scallion and more chili paste, if desired.
"1 1/2 cups" per person
453 Calories; 36g Fat (72.5% calories from fat); 15g Protein; 16g Carbohydrate; 1g Dietary Fiber; 74mg Cholesterol; 793mg Sodium.
Exchanges: 1 Grain(Starch); 2 Lean Meat; 1/2 Vegetable; 6 Fat; 0 Other Carbohydrates.

I have tried everything to find a healthier recipe. I just crave the stuff and am not even sure where all the calories come from, I just know the recipe converter swears they are in there.

That's what scared me, it makes 4 servings at 1000 per serving. I still don't think that thing can be right.
Did you remember to mark the number of servings? I put in a recipe that was way too high in calories and it turned out I had forgotten to "tell" the tracker that it was for 4 servings!LOL
I'm all red (with indignation!), white (scared of the direction our country is heading), and blue (saddened by the tax and spending of our children's children's future!)
I have a recipe for Korean short rib soup and according to the calorie tracker, it has 1000 calories per serving. This can not be right!! Is there anyone who may have a recipe for it with less calories? This is one of my favorites so I am suffering without it!
