Spiced Chicken - 7.8 carbs per serving

Ingredients
2 1/2 lb boneless skinless chicken breasts (or skinless thighs and drumsticks)
1 pinch salt
1 pinch black pepper
1/2 cup chopped yellow bell peppers
2 oz pitted calamata olives , sliced (and/or pimiento-stuffed green olives)
26 oz low sodium marinara sauce


Directions
1 Place chicken in a 3 1/2 or 4-quart slow cooker. Sprinkle chicken lightly with salt and black pepper. Add sweet pepper and olives to cooker. Pour spaghetti sauce over mixture in cooker.
2 Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3 1/2 hours.

I don't drink alcohol, so I have only had a virgin mojito. My favorites are berry and lime. I love how after about 2 seconds of swallowing you get a burst of mint. Yummy.

Low Carb Mojito

Servings: 1

Ingredients:

2 ounces Light Rum
1 ounce Lime juice
1 teaspoon Splenda
2 sprigs Mint leaves
4 ounces Soda Water

Place Splenda, a large pinch (2-3 leaves) of mint in a pint glass. Use muddler to lightly press mint and dissolve Splenda until it smells of spearmint gum. Add a splash of soda water Squeeze both halves of lime into the glass, leaving one hull in the mixture. Add rum, stir, and fill with ice. Top with soda water and garnish with mint sprig.

One (8 ounce) drink contains an estimated:

Cals: 152, FatCals: 0, TotFat: 0g

SatFat: 0g, PolyFat: 0g, MonoFat: 0g

Chol: 0mg, Na: 26mg, K: 72mg

TotCarbs: 3g, Fiber: 1g, Sugars: 0g

I didn't know Splenda sold brown sugar. Thanks for the info. I use Splenda with B Vitamins and the one with Fiber. Congrats on your win for your recipe.

I guess my only tip at this point (with nothing to cook in) is that I use Splenda to bake with. They now have it in brown sugar too. It works great for pies but some cookies and cakes don't seem to rise enough so I have to add extra baking powder. But I am a cooking fool. So as soon as I get some cookware, I will contribute here. I did win a contest in Taste Of Home magazine for my lemon sage chicken in a portabella white wine sauce. Now if I can only remember how I made it. LOL

Grilled Steak with Green Beans, Tomatoes and Chimichurri Sauce

Ingredients
3/4 pound green beans, trimmed
1 pint grape tomatoes, halved
1 tablespoon olive oil, plus more for grill grates
Kosher salt and freshly ground pepper
2 strip steaks (about 1-inch thick), about 1 1/2 pounds total, trimmed of excess fat and halved
Chimichurri sauce, recipe follows


Place a double layered piece of heavy-duty foil on a tray or cutting board; fold and gather edge to form a rim. Toss the green beans and tomatoes on foil with 1 tablespoon olive oil; season with salt and pepper.



Preheat a grill to medium. Lightly oil the grill grates and season the steak with salt and pepper. Slide the foil tray onto the grill; cook, tossing occasionally, until the beans char slightly and cook through, about 15 minutes.



Meanwhile, add the steaks to the grill; cook until desired doneness, about 5 minutes per side for medium-rare. Remove steaks to cutting board to rest 5 minutes. Slice, and serve steak and the vegetables with the Chimichurri Sauce.

Calories 451; Total Fat 29g (Sat Fat 11g, Mono Fat 13.4g, Poly Fat 1.54) ; Protein 37g; Carb 9g; Fiber 4g; Cholesterol 94mg; Sodium 217mg

Chimichurri Sauce:
1/2 small garlic clove
1 tablespoon red-wine vinegar
1/4 cup fresh herbs, such as parsley, mint and cilantro
1 tablespoon extra-virgin olive oil
1 tablespoon water
Kosher salt and freshly ground black pepper


Combine the garlic, vinegar, herbs, olive oil and water in small food processor; pulse until herbs are coarsely chopped. Season with salt and pepper.
