I make a very simple and easy Chicken and broccoli casserole...
In a backing dish, place fresh or frozen brocoli...lay as flat as possible.
(I use a simple casserole dish, as I cook for just myself and end up with 4 servings from 2 chicken breasts.)
Then lay out the chicken breasts across the broccoli.
then add a can of low sodium condensed cream of mushroom soup.
then add low fat shredded cheese across the top of the mushroom soup.
Put in the oven and bake at 350 for 45 minutes. When you start to smell it, take the foil off and let the cheese brown up.
It's very low in fat and sodium... with portion control. And it's very filling .... and a bit of a comfort food since it is creamy. The chicken breast (or pieces) stay very moist from the soup and cheese and the broccoli does cook quite a bit, but it makes the chicken taste even better...
