Good afternoon!

Here we go with confession time--I have not had a decent breakfast for over a week. And I am not sure when I'll find the time to resume a healthy breakfast habit. My work is suddenly extremely busy as well as my home life--I admit that I was eating out of control for a while but have gotten on track again in terms of calories and exercise anyway but not in starting my day with a nutritious and satisfying breakfast.

Hope everyone else is doing better than I am in this area.

Good morning!

I had oatmeal (old fashioned) with a little nut/dried fruit mix sprinkled in, a touch of nonfat milk, and about a tablespoon of brown sugar. I'm estimating a total of 400 calories.

I started making my left overs scramble this morning but then I remembered that I really want to use up the hard rolls so I toasted one and had a peanut butter and a bit of honey. I packed up my left overs scramble for lunch.

WalkingRed--Hawaii!!!! Wowzas is right!

Sounds like you've got some excellent breakfast plans for a while. I'll have to look up Bob's Red Mill. Sounds interesting.

I had a hard roll toasted with a touch of spreadable butter with canola and a tablespoon of blue cheese crumbles. Very tasty and satisfying.

I, too, will be moving sometime in the next 6 months but my destination is just about the opposite of Hawaii--I'll be moving to a small town in northern Minnesota just south of the Canadian border. I'm told that if summer falls on a weekend they have a picnic.

Good morning!

Forgive my absence on this thread- I've had a VERY busy week+... My brother was here visiting from Texas, and during that same weekend I found out we're moving... To HAWAII. Wowzas!

Despite all of that, I've kept on track. I ordered some fun new ingredients from Bob's Red Mill to shake up my normal morning steel cut oats. I ordered two granolas, a hot cereal mix (with 6 grains), and buckwheat pancake/waffle mix that I will try out this weekend. Right now, I'm eating Greek yogurt with frozen blueberries and 1/4 cup of Bob's Red Mill Coconut Crunch Granola. Yum! Only 230 calories, so I may have a snack sooner than later...

Good morning!

Another strange breakfast today. In my efforts to clean out left overs from the fridge that were threatening to take over I grabbed a package of chicken with whole grain pasta. Actually very tasty and satisfying and under 400 calories. Smelled really good, too.

I had a strange breakfast this morning--as I was dashing out the door I grabbed a container of left over spaghetti and some fresh raspberries. Very strange but oddly satisfying.

Good Morning!

I had an over-the-top breakfast this morning. I had a breakfast sandwich at Caribou and a LARGE mint condition latte. Almost 800 calories in total. The sandwich was very tasty and it alone would not be a bad thing though it is low in dietary fiber. The latte, on the other hand, was an impulse that I regret. I haven't had a "fancy" coffee in a long time and thought I would really enjoy the treat today. But I really did not enjoy it all that much. I think I would have been happier with a plain coffee with a little splenda. Lesson learned!

I'm back after a busy weekend. I did not do particularly well on the healthy eating front over the weekend so I'll just start over with today.

I did not feel very hungry this morning so I brought a carton of Activia yogurt and a serving multigrain cereal which I ate at my desk about 11:30.

Hope everyone had a good Easter and that your coming week goes well.

Good morning everyone!

This morning I had leftovers from supper last night--about 3 ounces of chicken and whole grain pasta. Not very exciting but I enjoyed it and it will tide me over until a late lunch with my daughter.

I probably will not be posting over the weekend so have a great afternoon today and a wonderful Easter weekend.

As for me I had my left overs scramble again--I've got lots of veggies and brown rice left over that I need to use up. Plus I genuinely enjoy it so it's a winner.

Everyone at work said my breakfast looked and smelled good! I can add it tasted great!

I had one slice of low fat cheese ( I ate this while the rest was in the microwave) plus a favorite breakfast of 1/4 cup brown & wild cooked rice, 1 tbl slivered raw blanched almonds, 1 tbl craisins, 1 strawberry sliced, 1 tsp butter, and 1/4-1/3 cup fat free milk. I heated rice and other ingredients for 1 minute in the microwave.
Lots of nutrients!

Hmm . . . an egg mixed in with oatmeal. Could be interesting. I'll look forward to hearing all about it.

I had a good morning this morning. Fed the cats first thing then started my "leftover scramble" by throwing about a half cup of left over vegetables and a little cooked brown rice in a pan, added a small diced onion and a handful of baby spinach leaves. While that stuff was being sauted, I started the coffee brewing and got a load of laundry started in the washer. Added my egg to the veggies--while that was cooking I grabbed a half cup of grapes, washed them and packed them for a mid morning snack. Finally I flipped the veggie-egg mixture, sprinkled on a tablespoon of blue cheese crumbles and turned the stove off. I covered the whole thing to allow the cheese to melt and the egg finish cooking in the warm pan while I got dressed. Let the cats out after convincing my picky eater that she should really eat her breakfast. Transferred my breakfast to a container to take with me to work (I prefer eating at home but just did not have the time today), poured my coffee in my travel mug and off I went and I even got to work on time.

I am not usually a morning person so am quite proud that I not only managed to create a satisfying and healthy breakfast but I was productive, too.

Today I had steel cut oats with fresh strawberry and Activia mixed in with a little cinnamon and brown sugar. I think I prefer them separate, but it was a fun experiment... I made enough oats for tomorrow, and I think I'm going to be bold and stir in an egg when I reheat it tomorrow- I've read it's a tasty way to add some protein to hot cereal. I'll let you know how it tastes!

Walkingred--I love your posts. You're an excellent writer! And you do an excellent job creating interesting and nutritious breakfasts.

I work in a greenhouse and things are getting a little crazy here right now so breakfast is on the run--same old Fiber One cereal and Activia yogurt today. I used up the last of the cereal so am looking forward to a different type tomorrow. I will also try to have my act together and remember to bring some fruit tomorrow.

Happy April! I love a new month...

This morning I woke up STARVING, so I wandered into the kitchen (eyes still mostly closed) and weighed out 5 ounces of plain Activia yogurt (it was on sale this week, but I've grown to prefer thicker Greek yogurt), and topped it with 1/2 a cup of oatmeal cereal, 1 teaspoon of slivered almonds, and a drizzle of honey. I also had a pink lady apple and it all came in under 300 calories with 11 g. of protein. Not too shabby...

I'm off to the store this afternoon (no work this week for Spring Break), and I'm thinking about trying out something new for breakfast. Story developing...

Yesterday I had a half of a veggie omelet--very satisfying.

Today I had a serving of Fiber One cereal with a small carton of Activia yogurt. Kind of heavy on the brand names but still relatively healthy.
