Walking Red--the breakfast sandwich you describe sounds fabulous. Panera Bread has a breakfast sandwich similar to it that is very nice.

I am back from a mini road trip with my son. We traveled about 250 miles north to look at a community college that he is considering for the fall. Seemed like a good school and we enjoyed our time in the car--we really like listening to audio books so that was fun. Unfortunately I had very bad eating habits for the entire trip.

However I am back and made a delicious and healthy breakfast this morning--my famous "left over scramble" with left over vegetables, an egg and a tablespoon of bleu cheese. Very satisfying.

I went OUT to breakfast today and had a really delicious spinach & egg white sandwich on wheat toast with tomato and avocado. That, plus a side of fruit was just under 400 calories! I will re-create it at home soon!

Walking Red--your peanut butter cup sandwich sounds delightful. What a nice way to start a day with a special treat like that!

I took a day off from posting yesterday--lots of running around to doctor's appointments and stuff. Had a breakfast sandwich late morning which was nice. At about 400 calories and very little dietary fiber it wasn't an ideal start but held me over until I ate dinner at 8:00pm. It was a VERY busy day.

Today, I'm ashamed to admit, I did not eat breakfast. The primary reason was that I'm not feeling the best today and simply didn't feel like eating.

Thank goodness it's Friday. I'm hoping I can have a better breakfast week next week but my son is home on spring break next week and we'll be on the road several days so that will be a BIG challenge for me.

Have a good weekend. I may not be able to post anything until mid week next week but we'll see.

Lol, Pat! While I haven't had it in a long while, pizza for breakfast is one of my favorites!! emoticon
Today I had same old, same old- steel cut oats with cinnamon, brown sugar, and blueberries, but YESTERDAY I was running late and discovered something really fun! I sliced a cup of strawberries and made a piece of toast with peanut butter, but realized I could afford a few extra calories.... Rather than making another piece of toast, I added a little nutella, and I'm going to sound like SUCH a dieter- but it tasted like a Reese's Peanut Butter Cup! Chocolate for breakfast? Yum!!

Good Morning!

I have set a very poor example of healthy breakfast eating today--in my rush this morning I grabbed a piece of left over pepperoni pizza--about 300 calories. Though the calorie count is not outrageous the healthy factor is definitely missing. The best I can say was that it was satisfying in a perverse kind of way and should tide me over to lunch.

Good afternoon.

I have had kind of a bad day but I've been good so far with my eating. I had a very light breakfast due to a time crunch--I had a cottage cheese/fruit combo pack with strawberries totalling 100 calories. I knew that I would be eating an early lunch so thought the light breakfast would do me and it was okay. It's midafternoon now and I'm very hungry so I'll have to extra vigilant on food choices the remainder of the day.

Hi Pat! I am so glad that you're finally finished with the baked oatmeal, lol! When you're feeling up to eating oats again, you should definitely try steel cut.

Things to know: HAVE PATIENCE! They take 30 minutes to cook! The directions call for a cup of oats (4 servings), I only make 1/4 cup at a time, and it still takes half an hour! I just put them on with lots of water (over a cup) and let them do their thing, stiring every 5-10 minutes (or when I remember "Oh NO! I've got a pot going!). Other than that, just like quick oats ;)

My wknd eating was okay- I was trying to balance St. Pat's festivities, so I had fruit cliced up and ready and granola and different yogurts at hand.

Today, I had my last Oikos nonfat Greek yogurt with one Nature Valley granola bar, coffee, and water on the way to work... Light, but I had a snack a couple hours later!

Good Monday Morning.

I had a very bad weekend in the eating department (let's just say I was in the "see food/eat it" mentality) so I'm not feeling very good about myself today. BUT I am feeling that today is a new day, in fact, it's the first day of the rest of my life so I'm going to make it a good one.

I started it out with a pretty healthy breakfast--baked oatmeal (finally it's gone) and carton of yogurt.

Have a good day everyone. Did I mention that I'm going to have a great day?

I love oatmeal, and look forward to trying out something new with it (I really don't want to burn out on it- it keeps me so full!).

Today for breakfast, I made steel cut oatmeal with cinnamon and brown sugar and dropped in a small handful of frozen blueberries (it cools it down so I can eat it faster, lol!). Afterwards, I had some of my fresh pineapple with a scoop of nonfat Greek yogurt and a dash of cinnamon (I'm cinnamon hungry these days). Yum! Totaled 277 calories, 46g carbs, 3g fat, and 15g protein

Hi Walking Red--my baked oatmeal is more like a coffee cake than oatmeal. I use 3 cups rolled oats (I prefer the old fashioned but quick works too), 1 cup nonfat milk, 2 beaten eggs, apple sauce (1/2 cup to a full cup--depends upon what I have on hand--the original recipe called for 1 cup vegetable oil but apple sauce is a much healthier option and it's tastier, too), brown sugar (I use about 3/4 cup unpacked), 2 tsp baking powder and 1 tsp salt. Combine everything, spray a 10" pie plate (deep dish type) with cooking spray and pour your mixture in it. Bake at 350 F for 45-50 minutes or until browned. Makes 6-8 servings. Serve warm with yogurt, cream or milk. I refrigerate it and it keeps nicely for a week or so. I usually eat left overs cold with yogurt. Which is what I had this morning. Tasty but I'm getting bored with it--I wish my daughter would eat the rest today.

Hi Pat- I tried baked oatmeal, but found that cleaning a third dish with baked-on oatmeal was a bummer... How do you prepare it? Stove top first and then bake, or straight to oven?

I was boring again- still finishing up the TJ's Toasted Oatmeal Flakes and Almond Milk... I am about to cut up a fresh pineapple, though. How exciting!

Once again, I brought a serving of baked oatmeal and a carton of yogurt to work for breakfast. I love baked oatmeal but I'm getting tired of it this week. I made it for my daughter who is home on spring break but she has not been eating it because she is sleeping to noon each day. Oh well. A couple of more days and the baked oatmeal will be gone.

Good Morning!

Hi Wallking--I often end up having the same type of breakfast several days running for the same reason--I have to use up some parishable ingredient that's on hand.

I didn't have the opportunity to post yesterday--my daughter is home on spring break and we did some running yesterday. As a result, I had a very difficult diet day but considering EVERY meal was a restaurant meal I didn't do too badly. For breakfast we hit Panera Bread and I had their Mediterranean Egg White on Ciabatta--DELICIOUS and very satisfying at a bit over 400 calories but very high in sodium. SIGH!

This morning I brought a serving of baked oatmeal (as I said, sometimes we just have to use up what we have on hand) and yogurt. Again, satisfying and healthy meal.

Walkingred--oatmeal sounds good. My college age daughter is home for spring break. She is a vegetarian so I try to make up some things that she can eat. I mixed up a batch of baked oatmeal to have in the fridge this week. I'm hoping to snag a serving or two for myself. It's very nice with yogurt.

This morning I split an order of steak and eggs with my husband so I had 1 scrambled egg, about a half cup hash browns, 3 oz steak and 1 slice wheat toast--about 600 cal. Lots of water and coffee because we went for breakfast early and then found we had to kill almost an hour before church.

My husband and I had our usual Saturday morning brunch after working out. We split a vegetable skillet (scrambled eggs, hash browns and lots of tomatoes, peppers, onions and mushrooms) and we each have whole wheat toast. Lots of calories (about 800) but very satisfying and we only eat two meals on Saturday so it works out.

Good Morning! TGIF! Once again I was not up in time to eat BEFORE leaving for work but brought my standard multi grain cereal (Kashi Go Lean Crunch today) and a carton of light activia yogurt. I've had about 12 oz of water so far and, of course, my 16 oz coffee with splenda.

Goal for next week--eat BEFORE work and still arrive on time.

Good morning all!

I woke up HONGRAY today! I made steel cut oats (I soaked them overnight and they were done in just under 20 minutes!) with blueberries, cinnamon, and a sprinkle of brown sugar AND I baked one egg and one egg white in a cup lined with a slice of deli ham (0.75 ounces) topped with a little Parmesan (0.25 ounces) for about 15 minutes at 375, and it was all divine. That with a couple glasses of cold water and strong black coffee for a total of: 342 calories, 32g carbs, 12g fat, 21g protein

I'm FULLLLLLLL!!!

Good Morning All.

Thanks to all recording their healthy breakfasts!

I was out of commission yesterday so did not post. I also did not have the healthiest of breakfasts yesterday. I nuked a frozen breakfast sandwich that I keep for emergencies--260 calories. It's important to note that when I am not feeling well like yesterday I tend to skip breakfast and then end up over eating junk later in the day so I guess it was good that I ate SOMETHING for breakfast.

This morning I was not able to eat before work like I prefer but I did pack some good stuff to eat at my desk. I have 1 cup of Kashi Go Lean Crunch, a small carton of Dannon Activia yogurt and an orange. I have a 24 oz bottle of water at hand (had about 8 oz of water at home to wash down my morning meds) and I brought a 16 oz coffee with Splenda. (Does walking to the bathroom count for cardio?)

5 Atlanta Bread Company mini blueberry muffins and 1 apple. 613 calories, 86g carbs, 30g fat, and 8 g protein. All washed down with a glass of water.

Sometimes my sweet tooth dictates breakfast when I'm running late.

1 cup Trader Joe's Toasted Oatmeal Flakes with 1/2 cup Trader Joe's Almond Smooth and 1 cup fresh straberries! And I refuse to start the day without a couple cups of strong black coffee and a glass of cold water... 205 calories, 41g carbs, 3g fat, and 5g protein

I may have to fix up a snack before I hit the door this morning- that was lighter than expected!

I find I need a big breakfast as I do a lot of exercise and strength training so they are often about 650 calories. I am hypothyroid so I need lots of fibre and being diabetic I need a good amount of protein. When I first started my diet, I used to have a lot of veggies for breakfast and I did feel good on it.
Sunday I had Bran flakes with oats and oat/wheatbran with sunflower, flax and coconut and skim milk. 20g lime juice with water.1/2 grapefruit and mocha with skimmed milk.
604 calories 72 carbs 20 fat 28 protein 15 fibre

Monday Home made muesli with wheatgerm seeds and coconut skimmed milk.
lime juice in water and half a grapefruit. Mocha skimmed milk.
713 calories 81 carbs 24 fat 36 protein 16 fibre

Tuesday 2 slices wholemeal bread with sunflower spread and hard boiled egg. Raw carrots, an orange and mocha with half water and half skimmed milk.
498 cal 60 carbs 16 fat 28 protein 12 fibre

I knew I wouldn't be doing so much exercise today with less Strength training so I ate less.

I had a Thomas' 100% whole wheat bagel with home-blended honey cinnamon cream cheese. I also had a plum as an "appetizer". Grand total: 346 calories, 63g carbs, 7g fat, 13g protein, and 8g fiber.

Unfortunately I did not get to have breakfast before work today but I brought some yummy and healthy things that I can eat at my desk. I have a 6 oz container of fresh blackberries, a cup of a lightly sweetened multigrain cereal and a 4 oz carton of Activia light yogurt. About 350 calories and very satisfying.

"Leftovers Scramble" again--left over vegetables sauteed in one tsp canola oil, one egg scrambled in the pan, a dash of herbal salt substitute, one tbsp blue cheese crumbles. I drank 16 oz water. Very satisfying breakfast.

Saturday mornings are a bit different for me. My husband and I usually sleep in a little, go to the gym together, then eat brunch at a little cafe we like. We split a vegetable skillet consisting of eggs, hash browns, a little cheese, lots of vegetables (peppers, tomatoes, onions, mushrooms) and whole wheat toast--my best guess is the calorie content is about 800 for my share but I think that may be high. Though it is half my calorie allotment for the day it is also only 1 of 2 meals that I eat on Saturdays. It's very tasty, very satisfying and it's quality time with my husband who works in another city so is only home on the weekends.

Okay, I hope I'm not stepping on anyone's toes but I thought it would be good to start a monthly breakfast log. Let us know what you had for breakfast each day!

I had a "Leftovers Egg Scramble" this morning.
