Brown rose rice with craisins, dried coconut, almonds, baked with foil over casserole.

My recipe is at http://recipes.sparkpeople.com/recipe-deta
il.asp?recipe=2202531

The recipe doesn't say, but I cook the rice with coconut oil instead of whatever the package says to use for butter or oil. I find brown rose rice at my natural foods store. Also the one used in the recipe. So this is delicious for breakfast or as a side for holiday or family meals.

I had pearl barley, tomato and vegetable soup this morning which was very warm and filling. I also ate a slice of wholemeal toast with low fat garlic and herb cheese spread and had a cup of Mocha made with 1% milk and no sugar or sweetener as I am diabetic. I like it that way! It was high in protein and low in calories and very filling. I didn't need a snack at mid-morning! Its 12.30 and I am not hungry yet! The barley is supposed to be good for diabetics and to lower cholesterol too! I usually have oat and wheat home made muesli, this made a nice change and I had it for the challenge I am on to eat more vegetables through the day.

One of my favorite cold weather breakfasts is.....like a lot of people here, steel cut oats. I cook only enough for one serving in my small sauce pot....but add about twice the water that recipe calls for.... I salt and pepper the water before putting in the steel cut oats. 5 minutes before the oats are done I carefully drop a egg into the oatmeal and let it poach till white is done and yolk is still runny. I also add about an ounce of ham slivers that I have browned to the top. This meal is complete with protein, carbs and not much fat. Under three hundred calories. I love this breakfast because it sticks with you till lunch or, longer if busy.

I make a pot of steal-cut oatmeal which has 4 servings at the begining of the week and then I 4 portions ready to go. Then I alternate one morning with

1/2 oatmeal, 1 TBL craisins/raisins, 1/2 tsp brown sugar and 1/2 cup milk
1 egg, 1/4 cup egg beaters, 1/2 oz cheese and any veggies or herbs I have on hand

If I need to have a little more carbs I add 1 slice Ezekiel sprout bread and if I need more calcium I add a glass of milk or yougert

In cold weather I love a 2 egg omelette filled with lots of veggies and salsa on the side and I'll add fruit if I know I've got an active day ahead of me.

The warmth of the omelette and the spice from the salsa are perfect to get me ready to,face the day!

Usually my breakfasts stay the same, but I do tend to have more oatmeal for breakfast in the colder months.

Do you tend to change your breakfasts up as the weather changes? If so, what's your favorite go-to start once the weather turns cold?
