The recipe doesn't say, but I cook the rice with coconut oil instead of whatever the package says to use for butter or oil. I find brown rose rice at my natural foods store. Also the one used in the recipe. So this is delicious for breakfast or as a side for holiday or family meals.
I had pearl barley, tomato and vegetable soup this morning which was very warm and filling. I also ate a slice of wholemeal toast with low fat garlic and herb cheese spread and had a cup of Mocha made with 1% milk and no sugar or sweetener as I am diabetic. I like it that way! It was high in protein and low in calories and very filling. I didn't need a snack at mid-morning! Its 12.30 and I am not hungry yet! The barley is supposed to be good for diabetics and to lower cholesterol too! I usually have oat and wheat home made muesli, this made a nice change and I had it for the challenge I am on to eat more vegetables through the day.

One of my favorite cold weather breakfasts is.....like a lot of people here, steel cut oats. I cook only enough for one serving in my small sauce pot....but add about twice the water that recipe calls for.... I salt and pepper the water before putting in the steel cut oats. 5 minutes before the oats are done I carefully drop a egg into the oatmeal and let it poach till white is done and yolk is still runny. I also add about an ounce of ham slivers that I have browned to the top. This meal is complete with protein, carbs and not much fat. Under three hundred calories. I love this breakfast because it sticks with you till lunch or, longer if busy.
