Update on sneaking in my Veggies...
Butternut squash mac and cheese was a hit. Everyone went back for seconds and some thirds. I used over 2 cups of pureed squash in the mix, reduced fat cheese blends and reduced fat Velveeta. No Butter and fat free half & half, a sprinkle of garlic powder, and onion powder and pepper.
Cauliflower mashed potatoes also another hit.. I used almost a full head of cauliflower minus what I used for my dinner the other night. with 7 medium sized potatoes, light butter, and fat free half & half salt and pepper. I pureed the cooked cauliflower before adding it to the cooked potatoes then mash together before adding butter and half & half so not to thin to much.
Sweet potatoes... I used half cubed sweet potatoes and half cubed butternut squash tossed in a little it of lemon juice to keep the potatoes from turning brown after peeling since I had to prep and combine the two the night before so no one noticed. With a little bit of light butter, brown sugar and Chinese five spice. Then baked until tender.
I also made a few changes in other dishes to cu some calories. No one noticed they ate there veggies.. lol and loved it all.
My husband and daughter the one that doesn't eat veggies both loved it and said the mac & cheese and potatoes were really good. I'm not telling what the secret ingredient are or they wont eat them again.
