Update on sneaking in my Veggies...
Butternut squash mac and cheese was a hit. Everyone went back for seconds and some thirds. I used over 2 cups of pureed squash in the mix, reduced fat cheese blends and reduced fat Velveeta. No Butter and fat free half & half, a sprinkle of garlic powder, and onion powder and pepper.
Cauliflower mashed potatoes also another hit.. I used almost a full head of cauliflower minus what I used for my dinner the other night. with 7 medium sized potatoes, light butter, and fat free half & half salt and pepper. I pureed the cooked cauliflower before adding it to the cooked potatoes then mash together before adding butter and half & half so not to thin to much.
Sweet potatoes... I used half cubed sweet potatoes and half cubed butternut squash tossed in a little it of lemon juice to keep the potatoes from turning brown after peeling since I had to prep and combine the two the night before so no one noticed. With a little bit of light butter, brown sugar and Chinese five spice. Then baked until tender.
I also made a few changes in other dishes to cu some calories. No one noticed they ate there veggies.. lol and loved it all.
My husband and daughter the one that doesn't eat veggies both loved it and said the mac & cheese and potatoes were really good. I'm not telling what the secret ingredient are or they wont eat them again.

Oh Amy is so sneaky......Love it!
Thanksgiving is a family affair for me. I go to my sister's and we all cook way more food than we can possibly eat. There are certain things I must make, without alteration but I have some leeway.I was going to make butternut squash mac & cheese as well, though not the reduced fat SP version that hides the squash. Mine is a variation of a BHG recipe that celebrates the squash and consequently loads on the fat and calories. Perhaps I will simply cut it up and roast it with salt & pepper like I do for home.
Moderation will be the plan for my day no matter what I do.

I have been trying to be really good this month and get back on track. So far I am succeeding. That way I can splurge a little and eat what I want also in moderation like Tereasa. I am cooking Thanksgiving dinner so I will have some control over the menu and lightening calories in some old recipes. I know one thing I am sneaking in is roasting some butternut squash with sweet potatoes then seasoning it and passing it off as just sweet potatoes. I have to disguise veggies all the time because half of the house refuses to try. So when I sneak them in as something else they never know the difference. And they always say how good it was. Shhh LOL...We wont tell.
I also think I am going to try the butternut squash mac & cheese with reduced fat cheese. I heard you cant even tell the squash is in it.
Cauliflower mashed potatoes. When you mix the two know one can tell. I am definitely getting in my veggies..Just have to prep everything the day before so no one see's what I am doing.

Thanksgiving is one day and I plan to eat what I want but in moderation of course. Too much of a good thing makes me sick :P Hope your having a nice day!

Good morning team. I hope this finds you having a good week so far. If you celebrate it, what's your game plan for that big ole Thanksgiving dinner(s) that are just around the corner. Do you plan to have a plan of action? are you just going to eat what you want? or are you going to eat in moderation? The holidays are fun to spend with family and friends; however, if you don't watch it, it's also a time where it's so easy to down all of the holiday goodies all around you.
