Very cool... You really do have a talent.

I just made a banana nut bread made with splenda instead of sugar and no one noticed a difference. If the recipe calls for 1 cup of sugar you us 1 cup of Splenda.

I looked at other peoples recommendations and I used 1/4 cup of 2% Milk and added 1 cup of Splenda. Instead of walnuts, I used crushed pecans.

Thank you Kelly! It is a love of mine. I love to be creative in whatever I tackle. If I can vision it I can usually create it. Did you by chance see the bird cage I just finished building?
I still have not tried baking with splenda although throughout this holiday season I just might have to to lose some of the sugar. I do cut the fats in some baking by using applesauce, carrots, pumpkin, zucchini and most of the time no one notices. I have 2 in the family that eat very little veggies so I sneak them in.. Thank you for the link to the stuffing recipes there are a lot that look really good and a couple similar to what I make. I think I am just going to lighten my butter up by at least half and use some whole grain high fiber breads and less salt.

The holidays are a struggle and I took a look at the cake you made last year and WOW. You have quite the talent. I made a loaf of banana nut bread; however, instead of using sugar, I used Splenda. Came out just as good. I also like to use "I Can't Believe It's Not Butter" when I make a cake, frosting or glaze for the cake. It actually tastes better than butter. Imagine that.

I cant get away with not making a cake. I make custom cakes and since I have started changing the way I eat they never get any in my house unless its someones birthday in the house. lol... If you look at the back ground on my page you will see the Halloween cake I made last year just for fun. I passed chunks of it out to my neighbors just to get it out of the house before I had a chance to eat it all. Its not a good hobby or profession to be in when you love cake and watch what you eat... emoticon

I am still going to make my standard stuff. I have been threaten with pain of death if I try to lighten my recipes. I'm just going to have to sneak in some additional dishes that are healthy. My brother in law usually has either a spicy stuffing or a spicy turkey, so I'm thinking I can play off that and make black beans & rice (with brown rice and very little additional fat) I'm aslo considering making a portobello pate (not really a "light" item, but relatively low cal) and serving it with pretzel crisps as a healthier choice along side the chips and dip that will be sitting on the table before dinner. I may go for a dessert too, but honestly, I don't think I will have that much time and a small piece of pumpkin pie and fresh fruit won't kill me.
This reminds me, I have to see how dangerous my butternut squash mac & cheese is.
ETA: the squash mac & cheese is pretty bad, it goes on my 'small serving only' list

Creating your own challenge is not working for me! I tend to slack off on it because I am not recording my accountability. I keep putting it off then it never gets done. This past week I have been trying really hard to start back to walking again at least 5-6 days a week. I also need to start ST's . Today has been a good day! Walked 4 miles this morning, 4 miles on the recumbent bike, 40 crunches and just finished 20 min of ST's. I am hoping to keep up this momentum.
The holidays are going to be hard, especially Thanksgiving. I am cooking and like Lora said high calorie/high fat foods. I already have request for my stuffing, homemade mac & cheese and deserts. However I am going to try to make some healthy changes to them and hopefully no one notices. I have already been asked not to make DIET FOOD.. LOL they want it the way I have made it in the past.
I will try to keep thinking of ideas and get back to you. Sorry I'm not much help. emoticon

Although I don't think I can undo "everything", I agree there is potential for major disaster in the upcoming months. Thanksgiving with my family (like every event with my family) is a major hi-cal/hi-fat food orgy. Heck, I started making spanikopita years ago for my niece (vegetarian at that time) so that she could enjoy something besides salad and mashed potatoes at the family dinner.
At least, I can make dishes that are healthier to bring with me (I love potluck!) and white meat turkey without skin and gravy is an easy choice.

I don't know what to suggest for the November challenge. Even I have slacked off in recording my progress for October. I am making progress, just not updating the thread. I'd like to see something nutrition based, since this is going to be the first of two very tough food months. I can't think of anything more specific right now.

Uh, oh.... it's just around the corner. The holidays where goodies galore are all around you and everything that you've worked very hard for can be undone in just a few weeks. Horrible to think about isn't it? But, unfortunately, it's true. Been there, done that.

With that said, I'm asking for suggestions on what you think a team goal(s) would be appropriate for the entire team to participate in. Keep in mind, each of us are at different fitness levels; however, I've noticed very little activity on the "Create Your Own Challenge." What do you think? By the way, if we do the "Create Your Own Challenge" again, and if you're doing a challenge from another team, it's okay to post this challenge on this team as well.

Let's brainstorm some ideas and get the ball rolling.

In the meantime, enjoy the weekend and I look forward to reading your feedback.
