Sushi (no fish) 2 cups of cooked sushi rice (in the asian isle at the store) 1/4 cup of rice wine vinegar 2 tablespoons sugar or sugar substitute 1 tablespoon of soy sauce veggies of your choice, in thin slices ( i used- cooked asparagus, baby corn and scallions) nori sheets - opt. (also found in the asian isle.. seaweed sheets)
in a bowl, mix the vinegar, sugar and soy sauce.. add rice and mix to coat, using a wooden spoon.... have the veggies cut and ready... place a heaping tablespoon of the rice in a damp palm.... lay on a piece of vegetable... roll the rice so it covers the veggie. is ok for the ends to stick it.. gives it character... now you can eat it like this or you can wrap a piece of nori around it.. i cut strips and wrap it around the rice. it has a fishy taste without adding fish.. so if that isn't your thing, leave it out.. still very good. and look at all the protein...
