Today was cheese sandwiches with loads of crispy lettuce. It was "only" iceberg, but still better than nothing. Younger son has used the left-over pasta as a pasta salad for his packed lunch tomorrow - with crispy grilled bacon, brie, pineapple and cucumber
My lunch today was smoked salmon with lemon juice on a couple of rolls, but no mayo. I think it would have tasted better with mayo, I think, but I'll keep that for sometime when I think it's really needed.
Still need to get my soup made, and also now have cooked pasta - a salad beckons me with tomato, cucumber, spring onions (green onion or salad onion), peas, chopped hard-boiled egg and crumbled feta cheese
Chef salad with 1 slice of turkey and 1 slice of ham and 1 hard boiled egg. I love chef salads. I change them up often. Sometimes I'll have grilled chicken and craisins or raisins. Sometimes tuna. I love chic peas (garbanzo beans) on them too.
Love the cookbook. I'm starting to pack my lunch rather than eat out every day. Trying to figure out an easy, healthy lunch (while not eating the same thing every day) is challenging. Please share any ideas for a mobile, easy and healthy lunch. Wishing you all a healthy 2013!
