I did a recent Chorizo recipe and Trader Joe's had Soy Chorizo. And it was good.

It depends, naturally on what you are making. Various squashes can be used . I use assorted beans, tofu, and sometimes the soy meats or crumbles. Spinach and other greens work in many dishes. Not very specific, but the team members are very good with examples. emoticon

I got the cookbook last night. I'm determined to make at least one to two recipes a week. The problem is that many of the recipes call for meat. How do I fix and change these for veggie eating?

Also, any suggestions on what to use as substitutions? I'm NOT a cook so I'm looking for all the help I can get!!!
