This soup is excellent....just excellent!! We ate it and really enjoyed every bite! The taste was wonderful, and it was filling. Hubby said "You can make this again any time", and that's certainly all I need to hear.
And there's enough leftovers for a couple of days for lunch.
Mmmmmmmmmmmmmmm!

Every day is a new day. Don't let anything that happened yesterday affect what will happen today.

This soup recipe ranks right up there with my favorites from the cookbook. It is similar in many ways to other soup recipes I have, but the addition of basil pesto makes it different enough and truly delicious. This is one recipe I don't even tinker with because it's so good as written. One serving offers a lot of filling, healthy soup for the calories (tons of vegetables--hurray!), and I love that it freezes well, too.
