I made Crunchy Chicken Salad for dinner tonight, serving it on top of a bed of romaine lettuce. Yummmm!!! And to make it even better, I have enough left over for two lunches this week. I will absolutely make this again. Soon!

Reminds me of the chicken salad my grandmother used to make. I tweaked it a bit, and in the past it was one of my go to foods. I had forgotten about that one. It sounds good and brings happy memories. I think I will try it again soon. emoticon emoticon

I made this to take along for my lunch on Saturday when I was helping with our middle school orchestra contest. It was terrific. I liked the combination of grapes, apples, chicken and pecans. It was very satisfying since it is high in protein.
