Today we had the left overs from the Slow Cooker Chicken Marinara (p. 179), lord it was better then the first time. Had it with string beans and a salad, so add veggies there. Have a good one and keep warm every one. (need to find an other soup for tomorrow I'm thinking) emoticon

I made the Blueberry Flaxseed Muffins, because they were featured on the start page and I had blueberries on hand.

Came out good! Nice grab breakfasts for the week.

Yesterday I made the "Slow Cooker Marinara with Chicken and Vegetables" Page 179, even the hubby loved it, but then he didn't know it came from a "diet" cook book. Sneaky me, emoticon

Today I made the Baked Chicken tenders (p.194) along with the roasted Red potatoes (p.316). Along with the potatoes I roasted a few carrots and some onion wedges to make it a meal. Instead of the yogurt dip they showed we just had a bit of BBQ sauce for dipping, my hubby wouldn't touch anything he knew had yogurt in it.

Wow, this is really cool. I was reading through this thread and found out that I could get points for having bought the book so I did all that and it encouraged me to go ahead and set up my Nutrition Tracker. Now I can add recipes as I make them from the book without worrying about "doing it later".

This site is so emoticon !!!!!!!

Made the Crunchy Chicken Salad for lunch today, but had it on a whole-wheat sandwich thin with leftover Baby Spinach with Strawberries and Toasted Almond salad. Also started the day with Stefanie's Berry Green Smoothie. Tonight's dinner is one of my favorites, Slow-Cooker Salsa Chicken with Spanish Rice.

I think I can, therefore I know I can.

Both my husband and I absolutely loved the Slow Cooker Chicken Stew recipe! Now I'm hungry for turkey and, also loving the Salisbury Hamburger Steak recipe, I'm swapping ground turkey for the beef. I know ... it's cheating. Gotta do it anyway! emoticon

Have a wonderful day, Everyone!

Today I used the Slow Cooker Chicken Stew (p.173) as my inspiration for my S.P. cookbook recipe of the day. To it I added about a cup of turnips (cubed), about a cup of rutabaga (cubed). Also substituted 2 cups of low sodium/low fat chicken broth for some of the water and thickened it with a bit of corn starch at the end of cooking. We like a thicker stew. Think it will be great.

Took me a few minutes to remember, the code is on page 467 in the book. Go to the shop look under DVD's and books, find the cookbook, click that link. I think it was on the top right on that page, something about enter the code for points here. Once you do that the recipes will show up in your tracker under the recipes tab. Let me know if you still have trouble.

Icanlosemore, did you get your spark points for owning the book? In the recipe section of the food tracker there is a pull down for the cook book recipe values. I don't know if you need to register that you purchased the book or not.

I made the baked chicken tenders.
Mixed reviews from the family. Everyone thought it needed more seasoning. Everyone liked the crunchy texture of the panko crumbs. My daughter suggested using lime juice or lemon juice instead of the white vinegar next time.
I will make it again but adjust the seasonings

I made Vegetable Lasagna tonight. It was delicious. Is there a way to add these recipes to the nutrition tracker so I don't have to enter everything.. The new spark book has a separate pull down list for the recipes. But I don't have one for the cookbook. I am lazy when it comes to entering food in the tracker and if it is hard I tend not to use it. Thanks

Green Chicken Curry. Give it a 3 out of 5 stars. It was too skimpy on the sauce and too weak in curry flavor. Won't make again probably, as I have better healthy curry recipes.

Slimming Sloppy Joes. Awesome, but quite a bit of heat if you use chipotle powder instead of the chili powder. Also, I didn't have green chilis in the house, so I used green pepper. I will definitely make this again.

I tried the Chicken Creole, Page 170. The recipe calls for 1/2 cup chili sauce. I used chili garlic sauce and I know this is usually very spicy. I only used about 1 tbps. and it was very, very spicy. I couldn't eat it. My husband enjoyed it. Maybe there was a misprint on the amount of chili sauce to use.

I made the Slow Cooker Chicken Stew and it is tasty. Simple and easy. Had it for lunch when my sister and I were cleaning my garage Thursday. Eating leftovers this week, yummmmmmmy.

I did a lot of cooking yesterday to get ready for the week ahead. I made the Quinoa Black Bean Casserole. That came out wonderfully! I also tried the Black Bean Burgers with the lime sauce. Those came out really well! They were the pleasant surprise of the day. Every time I've tried to make "burgers" they haven't come out well. Turns out all I needed was the right recipe! They will be my lunches and dinners this week. Hopefully it will keep me from turning to frozen meals and take out.

This morning I pulled out my crockpot and made a recipe from the website: Slow Cooker Herbed Turkey and Wild Rice Casserole. My finished product had a lot more rice than what was pictured for the recipe. Now I have noticed that the photographs are not always very accurate, but I did wonder if maybe the ingredient list was wrong. If anybody else has tried this dish, please holler back! But it was tasty, good comfort food for autumn. I am looking forward to my leftovers.

Tonight I made a recipe from the website rather than the cookbook: Chicken Breasts Stuffed with Goat Cheese and Sun-dried Tomatoes. I had never before made any sort of stuffed chicken breast, so this was new to me, and I learned that it is tricky to keep the stuffing INSIDE!! But after all was said and done, it was a pretty tasty dinner entree. And now I have three future dinner entrees in the freezer.

I'm trying the Braised Mexican Beef and Corn tortillas with a few changes... I don't have chickpeas, beef or yogurt. So i'm using my turkey breast, and some low fat sour cream and flour tortillas. So far its smelling really good. It will be finished in 12 minutes.

Hope it tastes as good as it smells!!!

Last Night I made a Recipe but not from the book it was from the online Recipe area & it was
called 'Chicken & Asparagus Pasta'...
It was just Ok because we found it here to be on the bland side so I would suggest maybe seasoning the Chicken before hand.

I made the Slow-Cooker Lasagna last night and it was awesome! emoticon

I used diced zucchini instead of egg plant.

I also added some small-diced yellow onion to beef while browning and some extra spices.

This will now become a "Staple-Dinner" in our house!

The banana waffles were great! I did use a whole egg, regular greek yogurt and 1% milk, since that's what I had, and also all-purpose flour insead of the oat flour...so it wasn't as "low fat" as the book recipe, but they were good. And I had tried to get rid of our waffle maker, now I'm happy I kept it!

I tried the berry nut bars, probably made too many substitutes since they turned out very dry and crumbly, they don't stick together at all. We don't eat jams so I tried using almond butter instead....but the dry mixture was also very dry, and I followed that part exactly as it was written, so not sure I'll try these again.
