Tonight I made a recipe from the website rather than the cookbook: Chicken Breasts Stuffed with Goat Cheese and Sun-dried Tomatoes. I had never before made any sort of stuffed chicken breast, so this was new to me, and I learned that it is tricky to keep the stuffing INSIDE!! But after all was said and done, it was a pretty tasty dinner entree. And now I have three future dinner entrees in the freezer.

Tonight I made Braised Mexican Beef with Tortillas but I had to change things a bit because I did not have the exact ingredients for this. So my changes were instead of beef, I used a turkey breast. Instead of chickpeas, I used kidney beans, in stead of garlic I used garlic powder. and flour tortillas.

This was my first attempt at this. And honestly, this turned out ok. Although I think the beef would have made it so much better.

This is the third recipe I've made from the SparkPeople Cookbook! So far my husband hasn't had any complaints!

Smile, it makes people wonder what you've been up to!

Just pulled the nutty fruity granola out of the oven, I used all almonds and dried cherries, as that's what I had available. It smells really good, so it should taste great. The tip about the honey worked great, but it was a bit hard to mix it in to the dry ingredients in the pan, I'll probably do mixing in a big bowl next time to get a better incorporation of ingredients.

I finally made something from the book. I made the Better-For-You Beef Stroganoff. My husband and I both liked it, so I guess its going to become a recipe that I will cook more often! Now I'm ready to try another one!!

I made my first recipe from the book, Spicy Black Bean Burgers. I didn't make the lime yogurt and used red pepper flakes in place of the jalapenos. Delicious they will become a regular in my meal planning rotations. emoticon

I am doing some batch cooking today to try and get in the habit for when fall (back to school) gets here and my life gets crazy. Slow Cooker lasagne's in right now and I am going to start the tuna casserole in a minute. This is my 1st attempt at the lasagne's but it looks great so far. We love the tuna casserole and it makes great leftovers.

OK, the shrimp were OK. I would change them up a bit - After coating the shrimp I would do a light spray of Cooking Spray, Raise the heat to 450 for 6 minutes, turn and then 4-6 minutes more. But still "Dang Tasty".

Today I was having salmon, so I looked in the SP cookbook to see if there was something I could make with it. The Downies' Honey-Ginger Salmon (p.227) caught my eye. I got the ingredients and made it today. It was SO delicious! Cooking it set off my stupid smoke alarm,but it was worth it. I just LOVED it!

I'm looking forward to making that...I love black beans. I made the Herbed Bulgur and Lentil salad, but I had to use quinoa instead of bulgur because I couldn't find it in the grocery store. Does anyone know where I would look for something like that? I looked where the dried beans are, but no luck. It is wonderful with the quinoa though. It must make a lot more though because I seem to have 8 1-cup servings instead of just 4. I added some greek mezze to it....quartered the olives and broke up the feta cheese. I don't think my family will eat it, but that means more for me. That works out well since it's supposed to get tastier as it sits and it will take me all week to eat it. Yum!
