The warm weather we have been having lately inspired me to be brave and grill today. I prepared Grilled Southwest Flat-iron Steak. The marinade went together very easily. I remembered to slice the meat against the grain, and it was delicious. I liked the spice on the outside of the meat. I also made brown rice and a side salad. And I did not burn myself!

Had to let restaurant chefs and fast-food line-cooks cook for me today. I managed to eat healthily in spite of that, but portion control is *so* much easier when a guy cooks for himself! Tomorrow will a better day for cooking.

OK, so I didn't have the stuff to do the leek/apple stuffing in the cookbook, so. . . .

I made Cornish hen with a mashed potato, green onion and jalepeno stuffing. The sides were roasted beets and asparagus.

Not much. Had yogurt for breakfast, salad for lunch and will have chicken that I cooked earlier and froze. Probably cook some vegetables--I think butternut squash and broccoli today. Have some potatoes already pre-cooked too. It's hard to cook fresh for one every day!

Tonight for dinner I made the Crunchy Chicken Salad. If you haven't tried it yet, don't wait. It was scrumptious! I made enough that I get to have it for lunch twice this week. I am definitely going to make my lunchmates jealous.

Today is a no-meat day for me, partly as a Lenten discipline and also because it is a good way to make sure I eat fish at least once a week : )

I have some bbq'd tilapia in individual servings in the freezer--slightly overcooked--that I think I will make into either fish cakes or a fish/rice casserole for dinner. Probably have tuna salad sandwich for lunch.

Thank you for the suggestion. I did wait until I had carrots and I absolutely loved these. I like the simplicity of them for lunch, so I am going to make more and freeze them to grab for lunches during the week.

I am going to make more Three Cheese Macaroni, Turkey meatloaves, and I'm going to try the chili rellanos sometime this weekend.

Kind of late to reply to your query, Sherirum, but you could grate pretty well anything with some texture: zuchinni, squash, turnip (might have somewhat stronger flavour than you'd like) . . .

Today I made a big salad for lunch and will have roast beef previously cooked and frozen in individual servings, potatoes, butternut squash, endive. First time ever I've prepared endive. Hope I like it!

A variation of the Dr. Oz healthy breakfast sandwich. I've made up some breakfast patties based on Chef Meg's Low Sodium recipe. For breakfast today I made a LS sausage/eggbeaters/swiss cheese mcmuffin florentine. It was good. Just about to feed all the components into the Nutrition Tracker to see how I fared. Since I ate late it's brunch not breakfast, so I'll have a little leeway for calories : ) Gotta play the odds!

yesterday I made the multigrain rolls. tasted great but didn't get a very nice color to them, kinda grey looking. not a brown color like I expected from seeing the picture in the cookbook.

For dinner: peeled and diced a couple of potatoes, sprayed with Olive Oil Pam and seasoned with Mrs. Dash Herb & Onion, nuked till cooked, served with just enough butter to give me that tiny taste of decadence. Warmed a pre-bbq'd chicken breast and had raw baby carrots and grape tomatoes on the side. Since lunch was pizza and caesar salad served at the meeting I attended all day, I figured I'd better go very light on the carbs and fats for dinner : )

Cook? I toasted a slice of bread for breakfast. Lunch was a tuna salad sandwich--no cooking, and dinner will be a big salad topped with a pre-cooked chicken breast-no cooking. I've got so much pre-cooked individual servings of meat and rice and pasta in the freezer that I may not get to cook for a month!!!!!

Last night I made Quinoa with Pea Pods and Peppers. It went together very easily and looked bright from the colors of the different vegetables. I used vegetable broth rather than water for the quinoa, and that added a nice richness. I would definitely do that again.

I served it hot last night, and that was delish. I made enough to have plenty of leftovers, and I plan on serving it cold for an upcoming lunch.

Welllllll, I sliced some bread off the loaf and toasted it, and I cut up half an orange and that is how much cooking I did for breakfast. Lunch and dinner (ie--a convenience store hot dog :(
were both eaten away from home as I drove to and from a meeting in a town 2.5 hours away. Better day tomorrow, I promise myself.

Tonight I tried my second recipe from the cookbook. I made Maple-glazed Roasted Salmon. It was quick and easy to put together, and the fish came out moist and delicious with a very delicate maple flavor. It was yummy! I plan on making this again next week.

I agree. This site has soooo many different resources that it is hard to figure it all out. But there is a way to pull up recipes from the cookbook. (One of the few things I have figured out!) When you search for a food to put onto your daily chart, you have four tabs to choose from: Search, Favorites, Groupings, and Recipes. If you select Recipes, one of the pulldown menus will be for the cookbook. The recipes are in alphabetical order.

I made Chef Meg's Creamy Broccoli-Cheddar Soup recipe, which she shared on the Doctors. It is yummy! I just wish I knew how to have it in my food tracker without entering all of the ingredients. I might be missing a resource somewhere, as SparkPeople has SO MANY of them!
I also realize that if all of the recipes were in the recipe section, there would be no need to purchase the cookbook.
Just wondering what others have done with recipes they tried.

I got my cookbook just one week ago yesterday, and last night I prepared my first recipe from it. I selected Paprika Chicken It was easy to put together, and the chicken was very tender. Unfortunately I did not care for the seasonings all that much. But I am not discouraged. I will just pick a different recipe for my next attempt!

Maple Glazed Roasted Salmon!!!!

Since the start of my jurney (about year and half ago), I have lost 40 pounds, which I am very proad of. Now to reach my goal, I need to loose another 80-10 pound.
I swim every other day about a mile and do interval cardio 2-3 days aweek plus 2 days strenght training with a trainer. and I eat a very healty, low fat, high protein, low carb diet. Anything else I should do to achive my goal?

I made the Light and Creamy Crab chowder. It is good. I still needed to add a little salt even with the basil, but it is a tasty recipe. I also like that it only makes 4 servings. Most soups are such large quanitites that for just one person I get tired of eating it before it is gone. I do occasionally freeze some, but that doesn't work well for chowders and creamy type soups.

I'm outside the CookBook today, too.
A sell-by quiche I got this afternoon, with a salad of tomato, ccucmber, green bell pepper and green olives. Plus potatoes sauteed with onions and garlic. And sliced mushroom in a piquant dressing.

I'm going to try the Salsa Chicken in my crock pot. Just went to my local farmer's market and got all the ingredients (except the salsa, which I already had, and the taco spices). It should be tasty. :) I'm making it up for lunches next week.
