I needed more fiber in my diet so I made for breakfast. Oatmeal, a tea spoon of brown sugar,nutmeg , cinnamon, dried fruit ,almonds and yogurt on top! It was very good!

i made homemade turkey meatballs and gravy with pasta for dinner. also made broccoli cheese soup with potatoes (from the cookbook) and banana choc chip muffins for work food this week.

and since i have work 12 hours tomorrow breakfast is just some quick scrambled eggs with cheese and an english muffin and some grapes packed for a morning snack. for lunch is the soup, an apple with peanut butter, a yogurt, and some cinnamon sugar pita chips (so yummy!) and for dinner when i get home grilled chicken caesar wrap with some cantaloupe and a piece of chocolate pound cake for dessert.

I made the Crock Pot Salsa Chicken and it was really good. I also made a Potato soup. one 28oz pkg O'Brien hash browns, a 32 oz carton low-sodium Veg Stock, 1 pkg McCormicks
Country Gravy (pepper) cook altogether and when heated through serve. I also added 1 C frozen corn

Yesterday I mixed up a batch of Herbed Bulgur & Lentil Salad. YUM! I had some for dinner with baked salmon and nuked broccoli and it was fantastic. I fully expect that after it has sat in the fridge for a day, it will taste even better.

I made Ratatouille with Whole Wheat Pasta last night. It was delicious! I added Trader Joe's turkey meatballs to it for some added protein and it really filled me up.

I also put together Stepfanie's Oatmeal and will give that a try for breakfast this morning. It sure looks as though it's going to be very tasty. emoticon

I am making the Roasted Root Vegetables. We didn't have the sweet potato and only had 1 carrot, but I just snuck some off the tray and it is awesome! It's our first experience with parsnips and my hubby and I may have just discovered a new favorite vegetable! This is a super simple recipe but so good!

Tonight I made Chef Meg's Honey Garlic Pork Chops that was featured the other day on the start page. I used pure organic maple syrup instead of the honey and used organic garlic powder instead of fresh garlic. The other ingredient in the marinate was soy sauce but I replaced it with Tamari which is a natural soy sauce with less sodium.

The flavor profile was delicious and I am so glad she posted this recipe. It was so quick to prepare as well as the pork cooks very quickly. The sweet and tangy sauce I think will be good with Chinese broccoli and I will use that vegetable with it the next time I make it.

Tilapia with roasted tomatoes
Pork tenderloin
Chicken kabobs
Potatoes with veggies and bacon
Cucumber salad

Loved them all. So we're going to use these up.

Not from the cookbook, but I did find the inspiration from Spark Recipes, I made spaghetti squash, and put oven-roasted cherry tomatoes w/ mushrooms over the top. I have a potluck at work tomorrow, so hope it goes over OK.

Today I made the baked chicken fingers. My 2 and 3 year old really liked them and so did my husband. They were very tasty and moist. Totally worth making your own chicken fingers opposed to buying them at a fast food joint.

I have some Smoked Turkey Sausage, so decided to try the recipe called,
Bluegrass Jambalaya. Sounds easy and good. I don't have the shrimp, but that's okay. I do have all the other ingredients to make it. emoticon

The chicken stew was OK, a little watery, and I only used half the water it called for! I think it would have benefitted from the technique that was listed in the book at the end of the chapter of dry roasting the ingredients ahead of time, and using even less water (or maybe broth instead of water?) If I make this again I'm going to try that.

Yesterday I made one of the smoothie recipes, with greens, frozen banana and blueberries, it didn't look at all like the picture, but did taste really good!

Today is crockpot day, I'm making the chicken stew with vegetables. Should make great lunches for the week.

I must confess, have not used the Spark cookbook as much lately as at the beginning when I got it. Going to church today and then short visit with a friend. Plan on making my Turkey Chili when I get back home. It is healthy and filling and will be a nice change on a cool day.

This morning I pulled out my crockpot and made a recipe from the website: Slow Cooker Herbed Turkey and Wild Rice Casserole. My finished product had a lot more rice than what was pictured for the recipe. Now I have noticed that the photographs are not always very accurate, but I did wonder if maybe the ingredient list was wrong. If anybody else has tried this dish, please holler back! But it was tasty, good comfort food for autumn. I am looking forward to my leftovers.

Sounds good! Portion control is the way to go...

I made the roasted squash soup and the tuna casserole, have had that one twice for lunch so far this week. Not bad.

I'm makin' Tacos tonight! YUM.. emoticon (Using Whole Wheat Tortillas)

I'm using Lean Ground Sirloin and using the homemade Taco Seasoning recipe from Spark Cookbook. (with my add-in's mentioned a few posts down)

We will have all the fresh, chopped veggie toppings: romaine lettuce, tomatoes, onions and 2% cheese as well. (I will measure all my stuff of course.)
Can't forget the light topping of Light Sour Cream.

Sides: Fat Free Refried Beans & Corn

Portion Control & Moderation is the key for me with meals like this! emoticon

I will be making the salsa chicken in the slow cooker. But since I have no salsa at the moment I will be using enchilada sauce and taco seasoning. It's definatnlty inpired by the cookbook.

I cooked the beef roast and the roasted root vegetables it make great leftovers. I should have enough for the next few days (veggies anyways I had my brothers over and they pretty much plowed through the meat) This makes for easy tracking.

We had the Tilapia with roasted tomatoes on page 232. I always try to make a recipe exactly as written the first time, then make notes to change later if I think I need to.
I will not make the lemon zest next time, but will use the lemon juice and may just lay some slices of lemon on the fish. I found that step did not really add any special flavor to the dish.
Also, I found I had to cook the fish about twice as long as the time given. Perhaps my fillets were thicker.
But I really did like the fish and the roasted tomatoes. I served it with the roasted carrots we love--- sunburst fries page 319

Have not tried the stew, but big fan of the crockpot ...

I made the tomato basil dressing yesterday, second time for me (I have lots of basil still growing, and really need to use it up before it freezes), this time I used the sun dried tomatoes, it was thick, and tasty!

I agree .......... am cooking the Salsa chicken as we speak ........ Easy to fix and this is the 2nd time ......... Tomorrow I am making my food for the next two weeks so I have about 6 recipes that I am going to try. I love being able to freeze food!! I am going to be making Awesome Breakfast Casserole, Better Berry Muffins, Crisy Chicken Fingers, Cheesy Potatoes, Garlic Brown Sugar Chicken, Cheesy Broccoli & Rice Casserole, Veggie-Packed Tomato Sauce with Spaghetti Squash, Super Simple Crock Pot Beef Stew & Jalapeno Cheese Cornbread. It's going to be a long day cooking but worth it.

The Salsa Chicken is awesome!

For the taco seasoning recipe, I added more of the cumin/chili powder and red pepper flakes.

I also added onion powder, garlic powder and dried cilantro.

I could not tell the difference from the packet and I'm thrilled!

We served this over rice for the first try. emoticon

Had salad and whole grain rolls on the side.

Next time I'm going to add a can of drained corn and we will serve on whole wheat tortillas or ww pitas with reduced fat cheese.
