This weekend I made:

Chicken Vegetable soup. - fantastic!!
Pork Roast with Mustard dill sauce - Really good
Couscous with peppers and tomatoes....don't remember the exact name. - didn't care for it, although my dh did. Maybe if it was heated up and the peppers stir fried a bit.

Slow Cooker Turkey Sausage and Bean Stew - Page 171
Good flavor, but I like my food spicy. Will try with spicy sausage and taco seasoning next time and maybe used ro-tel tomatoes.

I might suggest that you leave the peppers in the oven a bit longer before trying to peel them. The last time I tried it they peeled off in giant sheets. Don't worry that the skin is burnt, you're peeling it off!

I prefer to peel them to reduce the risk of heartburn, if that's not a problem, then you're good.

I made the Chili Rellnos tonight. simple to make, except for trying to pull the skin off the peppers after roasting/steaming. I gave up on that and left the skin on. Very tasty so it will be a repeater in our house.

I made the Crunchy Chicken Salad this week for my lunch. It's good, but I needed to add some salt and pepper. I like the crunch of the walnuts and celery. Packs and travels well for my work lunch.
Plan on trying one recipe a week, haven't decided which one is next though, so many look so gooood!

emoticon My favorite recipe so far is the Slow Cooker Ham Au Gratin. It was incredibly easy to assemble and ended up tasting so delicious.

Ground Beef Zucchini Eggplant Casserole
Because the 4% fat ground beef was so lean, I had to use a tbsp of Olive Oil to keep the onions and celery from sticking. emoticon
When I taste tested it it seemed a bit bland to me so I added a touch of Mrs Dash.
After the cheese was added it became something totally different. It turned out great! emoticon

Tonight I'm making the Ground Beef and Zucchini Casserole with a couple twists. first, I'm using 96% lean ground beef, and second I'm using eggplant instead of the zucchini because that's what I have in the fridge! Should be delicious!

Last night I made the baked chicken tenders, honey mustard dipping sauce and quinoa with pea pods and peppers. All 3 recipes were delish! I'm looking forward to trying the mac & cheese.

I made the mac & cheese recipe, substituting cauliflower & broccolli for half the pasta, and it is so good! I've had lots of luck with the sides and vegetable dishes, but not so much with the proteins.
