My honey thinks that sweet potatoes should be a dessert item so I avoid using them when possible, but really wanted to try this recipe. So I added some frozen shredded hash browns that I had left over. We wrapped it up in burritos to make it more of a meal. Yum!!

I just made this tonight and really liked it. I made some modifications because after I started mixing things up, I really felt like maybe my sweet potatoes were extra large and a bit too much so I started increasing the quantity of everything else. Then used an 11x17 pan and increased baking time by 10-15 minutes.
I'll be making it again for sure.

I made the Black Bean Quinoa casserole and didn't have any problem. The sweet patatoe was supposed to be shredded if I remember right....which wouldn't take much cooking time...wonder if your oven temp. is wrong?
Has anyone made this dish???? I made it tonight, and after 30 minutes cooking, it wasn't even warm in the middle, and the sweet potatoes were raw!!! I had to cook it for 50 more minutes!!! Did anyon else find this?
