When I got the cookbook I had my boyfriend look through to see if there was anything that caught his eye that he would like me to make and he very quickly pointed out the Jambalaya recipe. We made it the next day and it was so good we made it again 2 days later when we had finished up all the leftovers from the first batch! Definately delicious!

Made it tonight. The celery I thought I had was bad, so I added carrots and mushrooms instead. They're the same right? :) I also don't have any tomato paste so I just chopped up a tomato and threw it in.
It was delicious! I am so excited to bring leftovers for lunch tomorrow and have everyone at work jealous of me. It was just the right amount of 'spice' for my palette.
Next time I make it - for I will make it again - I am keeping the added carrots and mushrooms, but I will make sure I have celery too!

I just finished making this recipe, except for the shrimp, as I plan on having it another night. Hopefully it's good!

Thanks FHAR451! I'll probably give that a try since I have some instant brown rice available. I know the dish tastes amazing, I just couldn't get my rice to finish. Hopefully it will work this time.

I just got the book, and the Jambalaya is the first recipe I am going to make out of it. I'm going to cook it later this week though as I still have leftover homemade beef & chicken stews to finish. :)

I used instant brown rice. You might also try cooking the rice separately and then adding it.

I'm with IMJUSTME313. I made it after I read all of the reviews here. My rice did not end up cooking all of the way at all. It was still pretty crunchy. I could tell that the recipe would taste amazing if it was done, but rice that isn't cooked all of the way is one of those tastes that just really turns me off of something. I haven't tried it again since.

I made this and it came out ok... I could tell it was supposed to be good, but the brown rice was crunchy and I let it cook forever! I was so disappointed, where did I go wrong?

If it is to be, it is up to me.

This is an AWESOME recipe - I am totally making this again (double batch) and brining it to our superbowl party - no one will even suspect it's "good for them"! It will be great to have some healthy options there! :)

THANK YOU for this fabulous recipe!

Made this when I first got my book and it turned out better than I expected. So happy that it was flavorful and healthy all at the same time. Eating healthy can rock too!

It's very good! I heated things up a bit and added chicken andouille sausage to it. Very yummy!

I've got it on my list to make this week.

p.s. the trouble with looking through cookbooks and menu planning so you can go grocery shopping can make a girl hungry!! LOL

Has anyone else tried this recipe from the book? It was amazing!! I've always wanted to try jambalaya but it had way too much sodium for me. Now I can state that I cooked a mean dish.
