It's a common thing with recipes, especially the "healthy" ones to be lacking in seasoning.

I think if you have health problems concerning salt, you should try to find alternatives (Mrs Dash etc) but if you don't I think that seasoning at the start is much better than trying to play catch up after it's cooked. You tend to use far more salt after than before.

just a guess....salt? Maybe that tip that is on the next page---to heat the spices and meat first?

I did use chicken broth.

I'll let you know picky hubby's analysis of the recipe later.

UPDATE:

My picky hubby's analysis-----too many green leafy and stick herbs (lol) and it needs more garlic.

Next time, I will use several cloves of fresh garlic and brown them with the chicken and less "green leafy and stick" herbs before putting it all into the slow-cooker.

This recipe does make enough for a crowd or for leftovers for lunch the next day.

Hopefully, someone that has made this could help you and me out with that missing something. I like lots of flavor in my food or I feel like I'm missing something. So lady's what is it missing??? lol

I've got this in the slow-cooker right now. hmmmm. It smells so good! I plan to add some leftover green beans to it a few hours before we eat supper.

Trying to decide what kind of bread to serve with it. Has anyone made this stew yet? What bread did you serve with yours?


oh, and be sure the read the Chef Meg's Tip on the next page. I missed it this first time, but added a note to page 173 for the next time.
