I certainly understand about the thyroid. I am glad you asked the question, because it helped me also. For some soups, I think I might try a puree it would make a much thicker soup, but if I added a bit of broth or some of the liquid of the cooked vegetables it might work. I make many soups, and have seen many things tried, but I haven't tried this yet. It is on my list. emoticon emoticon

Because I have an underactive thyroid, I knew I couldn't use soymilk.

Evaporated Milk
Evaporated milk is just concentrated milk (with about 60% of the water removed). For an easy substitute, use Vance's Foods DariFree Original Powder Gluten-Free Beverage. Rather than mixing it as milk, mix 1/2 c. of the powder with 1 c. of hot water.

Substituting for Evaporated Milk

You can make your own substitute by making a "safe" evaporated milk and adding sugar. Evaporated milk is milk that has water content reduced by 60%. Simmer any quantity of soy or rice milk in a pan until it reduced by 60%. Approximately 3 cups of rice or soy milk will leave 1 cup of evaporated milk left at the end. Be careful not to scald it. Next, mix one cup of evaporated milk with 1-1/4 cups of sugar. Heat until the sugar is completely dissolved. Cool. It will yield 1 cups of evaporated milk substitute. It will keep in the refrigerator for several days.

Another alternative for evaporated milk is to substitute coconut milk 1:1 in the recipe. This will impart a coconut flavor to the recipe, so it works in some recipes but not all.

Interesting question about the substitution. Have you considered a soy product. Soymilk or yogurt? You might just want to thicken it with a rue (sp) and then add to a a blender or a food processor. I would be interested in what you learn. emoticon

I'm so sorry......it was EVAPORATED milk that is in the recipe and caused the issue.

Is there a substitute for that?

No milk product. If you have issues with eggs or gluten you still have issues.

I made the creamy broccoli soup and we enjoyed it, but our guts did not. All of us have intestinal sensitivities to milk.
I'd really like to make the soup again, but am wondering if there's a replacement for condensed milk I could use.
