I agree with your assessment of spaghetti squash-especially after the first time. However, it is much like tofu or other things which comes to mind, it takes on the flavors it is put with. I hope you enjoy this better. Interested in knowing what you think. emoticon

I tried spaghetti squash once and we didn't care for it. I'll try this recipe!

I would at least blanch the broccoli for this dish. It will continue to cook with the hot spaghetti Squash and you don't want it to be overcooked.

This may sound utterly ridiculous, but it doesn't specify whether you cook the broccoli or not. It seems strange to me to have a warm dish with uncooked broccoli but maybe it would work. Did you guys cook your broccoli first? I'm really excited about trying this recipe!

I tried this recipe last night and I am in LOVE with spaghetti squash!!!! I was reading that it will keep for months at 'root cellar' temperature.... I might have to stock up at the farmer's market! emoticon

That is too bad about not finding the squash. It seems that whenever you find something you like or want to try it is discontinued. I hope you find an alternative place of purchase or better yet the seeds grow.

I am hoping to try the broccoli soup soon. As I haven't been 100% I have been staying with a friend. Hoping to make it home tomorrow. They are not fond of soups. I eat many of them. Looking forward to trying this one soon. Looks good. emoticon

Spaghetti Squash used to be in all the green grocers here years ago but they are all but impossible to find now.

I have some seeds from the last time I had them and I'm trying to germinate them as I love the squash even just as a vegetable.

I tried this recipe today (and spaghetti squash for the first time) and it was great! I added roasted chicken and for my self, I added a large tomato chopped up (to increase my potassium)as well. I am definitely be eating more spaghetti squash from now on. emoticon

There are no dumb questions. So many varieties of foods to choose from. I have fixed spaghetti squash a couple of times. I remember it as being a long yellow squash. I think I baked it until it was completely done. It seems to me that as long as it is soft and well cooked
much like any squash you wait until cool and scrape the insides out. They will actually look similar to spaghetti. This is what you are using. I find it a good substitute, a bit milder, and more work, but the nutrient content is worth it. emoticon

Broccoli and Spaghetti Squash with Lemon Pepper

Squash is such a bargain right now, so I picked up a spaghetti squash to give this recipe a try. I'm always looking for veggie dishes to make dinner more interesting. This one is awesome! I made a big dish of it with almost no leftovers! Super fast and easy, too. Kids ate it up, and DH who confessed he doesn't even like spaghetti squash took a big serving.

For once I actually followed the recipe exactly (I know, right?) except that I was out of Parmesan and substituted freshly grated asiago. I also put the whole mixture into a casserole dish and stuck it in the oven at 350' while I finished the entree.
