Our family loves Tilapia (not real fishy and NO bones!) so this was our first choice when picking a recipe. It was good. Two things I will change the next time I make it, I will not add the lemon zest...it was like eating a lemonhead on the fish. The juice that I squeezed over it was awesome and enough. The grape tomatoes were so yummy, I had to refrain from eating them all before roasting them. I think for the recipe, next time, I will use chopped tomatoes. The grape tomatoes seemed to develop tough skins when roasted. We also ended up salting it a little. Definitely is a keeper!
