I've tried three of the recipes in the book so far. The Chicken Tenders are my next recipe to try. I will most likely add organic green beans and skip the potatoes (or plan on a baked potato). I have a similar recipe that I use like this and love it. So, looking forward to this one (page 194). I have used chicken breasts or tenders and both work out great.
Made these and served with a salad. This is going into rotation for those nights I need comfort food.
Life is to short to worry about the small stuff. Live life one day at a time and enjoy yourself. Give yourself a few minutes to reflect on the mistakes but look for ways that you can change for the better.
I made these last night as well!! Very good with BBQ sauce. I also didnt have the pizza screen nor did I turn them and they still turned out pretty good!! : )

Kid, husband, and mom approved!! I made the tenders last night for supper, they were super easy and quick, and delicious with honey mustard dipping sauce. I cooked them alongside some roasted potatoes and they turned out great. I don't have a pizza screen so I cooked them directly on a sheet pan with parchment paper to prevent sticking, I turned them over at the last five minutes to crisp both sides.

I made the Baked Chicken Tenders and the Roasted Red Potatoes with Garlic Herb Oil for dinner tonight. Turned out perfect! My 5 yr old son, who is terribly picky, loved the chicken. Definitely will make again! On a side note - I did use the pizza screen like was advised in the recipe, not sure if I will do that again. Stuck to it some and was difficult to clean.
