I made these muffins this morning. I keep ground flaxseed in my refrigerator, so I just mixed a tablespoon of it into the batter. Honestly, I don't think it's even detectable in the muffins.
Three kids ages 11, 12, and 15 have each had two of these this morning (snow shoveling makes them hungry!) and the muffins get only thumbs up. I had one too and thought it was yummy. Very moist and plenty of flavor. I'll probably add a little lemon zest next time for something different.

I made these as my first recipe from the book! I loved them, they were so moist and yummy! I can't wait to make another batch. They were very simple and easy to make, I used everything I already had in my kitchen. I substituted the brown sugar for the Splenda Brown Sugar Blend, because that's all I had in my shelf and it turned out wonderfully. I am definitely looking forward to breakfast this week!

These muffins were actually the first recipe I tried from the cookbook. I love them! I keep them in the freezer and take one out and let it get to room temp as I am on the computer, drinking my morning coffee.
How funny about the mention of sprinkling flaxseeds on top of the muffins. I say this b/c I have ground flaxseed which I DIDN'T sprinkle on top, I simply mixed it right in the muffin batter itself. I'm not sure I even noticed my mistake until now. (That's why I'm LOLing....at MYSELF). I did buy some flaxSEEDS once and didn't want to use them for the same reason mentioned....I don't tend to think that seeds actually get digested.
The flaxseed is sprinkled on top and I'm sure it can be left out. I'm not sure about the Splenda brown sugar as I've never used it. If anyone knows the answer to this, please let us know. I'm wondering about it now too!

These muffins are fantastic! They were the first thing I ever made with whole wheat flour and I was a bit leary. I thought they might come out hard and dry but they were the total opposite. They are full of flavor.
Normally I cook two meals . . . one for me and one for my husband. It seems if its healthy it isn't for him. He ate the muffins and loved them. This is a first also and I'll definitely make them again.
