These muffins were actually the first recipe I tried from the cookbook. I love them! I keep them in the freezer and take one out and let it get to room temp as I am on the computer, drinking my morning coffee.
How funny about the mention of sprinkling flaxseeds on top of the muffins. I say this b/c I have ground flaxseed which I DIDN'T sprinkle on top, I simply mixed it right in the muffin batter itself. I'm not sure I even noticed my mistake until now. (That's why I'm LOLing....at MYSELF).
I did buy some flaxSEEDS once and didn't want to use them for the same reason mentioned....I don't tend to think that seeds actually get digested.
