I would like to try it again. I thought about thawing the broccoli out, but I figured that could be a mess! Since I enjoy cream of broccoli soup so much -- I will try it again. Thanks so much for your input.

KINEPS. I think that frozen broccoli has more water. If we use the frozen maybe we should use less broth. Keep trying until you get the consistency that you like. Good luck.

Maybe that's why my soup didn't seem very creamy. I used frozen -- decided to make it at the last minute. I'll try it again using fresh.

I made this soup recipe today and I really enjoyed it. It was very filling. I got more than 4, 1 cup servings but I divided equally. I also added all the cheese at once for I want to freeze the other 3 portions. Added 1/4 oz of cheese for garnish, and added extra caloric/nutritional values to tracker. It is a keeper.

This soup was mostly a success for my family. His youngest did not care for it, which was odd because she is the broccoli lover, but his eldest LOVED it and said it is now her second favorite soup! I did use half-cauliflower, half-broccoli, and gave the kids a hint of extra cheese (the appearance of the sprinkle on top made them upset at first, so maybe double that for them). It was fantastic though, and my fiance loved it and he is not a veggie fan.

I just made the soup last night. I was happy with it, it was very creamy and there is just enough cheese.

So you're thinking that fresh broccoli is better than frozen -- but would that make a difference in freezing the soup?

Humm might be too watery with frozen broccoli unless you really blot up the excess moisture that comes from defrosting .

I'm so glad someone posted about the broccoli soup. I haven't made it yet -- but I'm looking forward to it. Since I'm the only one in my family that eats it -- can it be frozen?

Hi,

So I did not want to be known as the one who always posts with problems about a recipe! I made the cream of broccoli soup and the stuffed pork tenderloin. Both delicious and the soup seemed even tastier a day or two later!
