I really appreciate you taking the time to help me with the proportions. This is going to be an addition to my condiments soon. emoticon

You're welcome, HungryWoman2. I rarely have any other dressing because I like this one so much. For me the following measurements work for one serving.

1 tbl of olive oil
1 tbl of honey (you may not need this much; I blame it on the "sweet teeth")
1 tsp of mustard
2 tsp of balsamic vinegar

Mix and serve. Again you can tweak the amounts.

I found a simple 4 ingredient dressing on Sparkpeople sometime ago and it's a staple dressing for me. It uses olive oil so there is some fat but I control how much. Balsamic Vinaigrette - olive oil, mustard, honey and of course balsamic vinegar. Amount vary per your desired taste preference.

My father-in-law uses lemon juice, a little olive oil, and seasoning salt on his salads. It's really tasty.

Not from the book, but I also dislike most diet salad dressings. I have found one that I actually like, Naturally Fresh Light Ranch. Its not the lightest of light dressings but I find it tastes much better than others I have tried.

My book is on order from Amazon. I love salads but have never found a low fat salad dressing I liked. Never tried to make my own. Heard there are some good ones in the book. If you tried one and liked it can you leave me the page number. I think salad dressing will be the first thing I will make from the book. Thank You!
