right now it's roasted root veges. there are so many great veges right now that I can serve this easily three times throughout the week and it's different everytime!

I tried the Minestrone Soup with Parmesan Crisp last night and it was very good. The Parmesan Crisp was something new for me and a neat way for crunch without the bread. I recommend trying this.

My only suggestion is make sure you "chop" a head of cabbage like the recipe says and not take a shortcut like I did by using shredded (like coleslaw) cabbage. Although the flavor was fine, it was too stringy. My bad.

I haven't made very many to date, but I did just make the slow cooker salsa chicken. I really enjoy it. As usual, I tweaked a bit, as I do when I cook in terms of some ingredients, but this is so simple and versatile, I am certain it will be made often. emoticon

I was going to make Minestrone Soup, but it looks like it is going to be in the 80's today. I think we will have left over Mini Turkey Meatloaf and Roasted Root Veggies.

So far, my favorite has been the roasted root vegetables--which surprised the heck out of me because I am NOT a big fan of veggies!

In all, though, I've liked all the recipes I've tried. I would tweak some of them a bit, but whatever....

I love the Three-Cheese Macaroni. DH was skeptical that it could taste nearly as good as the 600-calorie recipe we used to make. It tasted very different, but a good different!

I made Roasted Pork Tenderloin with Mustard Dill Sauce and served it over the Baked Lemon-Spiced Rice with Sautéed Cumin Carrots as a side. The tenderloin and sauce were a big hit, the baked rice was perfect and really easy in the oven. The sautéed cumin carrots were nice, but I prefer my roasted cumin carrots. We are having the leftover Mustard Dill Sauce with the crab cakes I'm making for dinner tonight.

Made the Trim Tamale Pie recipe that was one of the bonus ones for buying the book. Family gobbled up the whole thing! I did add a large chopped onion and I think I'll use Rotel diced tomatoes and chilies next time instead of the jalapenos (family was mixed on those). It was yummy and pretty easy to make. It's a keeper!

I'm making the pecan chicken with maple citrus sauce tonight. I think I used more chicken than it calls for (it was frozen and I didn't bother weighing it when it thawed). I've had maple orange chicken before though, and loved it. So I'm looking forward to this.

I made the Baked Chicken Tenders and the Roasted Red Potatoes with Garlic Herb Oil.

The only change I made to the chicken recipe is using 2% milk instead of skim milk -- it only altered the calories by 4; and I used basil. Next time I will add salt and pepper. I didn't this time because it calls for Parmesan cheese - which can be salty and I thought the basil would be enough seasoning.

The potatoes were amazing. Crispy outside and tender instead and the flavor was spot-on!!!

My family couldn't believe the recipes came from SP -- so that was huge for me. We had enough left over for lunch . . . . which my husband was thoughtful enough to eat. emoticon

Just a side note --- the recipe for the chicken on SP uses cider vinegar but the cookbook says white vinegar. Since you're using the vinegar and milk to make buttermilk I don't know how the cider vinegar would taste.

Yesterday I fixed the "Light Spinach & Mushroom Quiche". I changed just a few of the ingredient amounts just to make it work for me to double the recipe, without having to open up a 2nd can of evaporated milk. (This means that I used a 12 oz can of evaporated milk and 12 oz of skim milk for the doubled recipe....meaning, less milk than originally called for. I usually use less milk in any given quiche recipe that I use.) I was able to try it today for breakfast, and thought it was very good! My only disappointment was that when I went to look for this recipe in my "Cookbook Recipe's" in the SP food tracker, I couldn't find it there at all.

In the nutrition tracker when you go to the "recipes" tab, it's the last option, "Cookbook Recipes".

An earlier posting gave these instructions to add the recipe to the Nutrition Tracker:

"Simply click on the "Recipes" tab on the Nutrition Tracker, then scroll down to find the name of the recipe you want to add. "

I'm not sure which category they appear under and I tried them all with no success. However, I did succeed by typing the recipe name in "Search Recipes" section in the Tracker. This in turn pops you over to the Recipe Search in SparkRecipes. Is this how it is supposed to work?

Thanks,
Catherine

Ok, thus far, my favorite recipe is DEFINITELY the Beef and Blue sandwich. OMG SO GOOD! Seriously. It was heaven on a sandwich thin. I looove blue cheese, and I adore carmelized onions, so I knew I would like it. But wow! We're having it again next week for sure!

I love the Green Smoothie and also the Slow Cooker Lasagne. Also the egg white, spinach and mushroom omelet is amazing - I never thought that just a touch of Parmesan cheese in the eggs would replace gooey cheddar or American cheese, but it does! The chicken salad is amazing, too. I have lots of favorites!

I LOVE this cookbook!

So far I have made the recipes for multigrain rolls, blueberry flax muffins, lemon herb roasted chicken, 3-cheese macaroni & cheese, and dark chocolate angel food cake. It all tasted so good it's hard to pick a favorite, but I think so far the winner is the blueberry muffins - they are so tasty, versatile and portable, and easy to freeze and grab on the run.

If you click on "recipes" in your food tracker, all the cookbook recipes are in there (for recording it on your food tracker, that is).

I haven't made enough from the book to have a favorite, but was very happy to make out my grocery list and shop for recipes to use this week. Going to try the Spinach & Mushroom Quiche (97), Sliced Roast Beef & Blue Sandwiches (136), and Fish Packets (224). Those were my dinner selections for the family. To try for myself some morning, I'm looking forward to trying the Pumpkin Smoothie (82) since this seems the perfect time of year for it. emoticon

Everything looks so yummy ! I was very happy to receive my 500 SparkPoints and the bonus items to download. If you bought the book before that offer came on the Spark site just click on the "buy now" button and it will tell you how to get them.
I have a question, though, are these recipes considered SparkRecipes to earn points for on our Trackers? If so, how do you track them ?? Thanks!
(I know how to track a recipe from SparkRecipes, but assume that all of the recipes from the book wouldn't be on site.)

Too soon to declare a favorite. But very pleased so far, especially since my hubby and brother-in-law (who lives with us) are both enjoying the recipe. I thought for sure getting them to like these new meals would be like pulling teeth.

I had the Warm & Spicy Banana Waffles this morning for breakfast. Yummy! Just like the notes said, it didn't syrup at all. I would make one change, maybe add a splash of vanilla to make it a little more sweet. But other than that, it was wonderful!

I made the roasted red potatoes in garlic oil as a side for dinner tonight as well, but haven't had a chance to eat it yet. I prepared it ahead of time for a friend of mine and took some of it home with me. I plan on reheating them and serving them up tonight!

:) Erin

EDITED TO ADD:
I ate the potato dish tonight. It was yummy! Looking forward to trying out Stepfanie's oatmeal in the morning and the tuna fish casserole dish tomorrow night. So far, all of the meals have been pretty easy to prepare and (as promised) delicious!

My daughter and I just made the tomato-cheese frittata -- it was really good! It's the only one we've made so far, so it is the favorite so far : ) Still figuring out how to find it and add it to my meal plan on the site/get points for making a recipe. I think I read something somewhere, but can't remember.

Never mind, I just found it. For anyone else who is having the same issue: "Simply click on the "Recipes" tab on the Nutrition Tracker, then scroll down to find the name of the recipe you want to add. You can even save them as Favorites! "

My SparkPeople Cookbook just arrived today, so I don't have a favorite recipe yet. I do have a "first" recipe I plan to make, though -- "Better-for-You Beef Stroganoff". I won't get the chance until this weekend, but I'll let you all know how it turned out. I'm certain it will be yummy. The hardest part will be sticking to just one serving (it looks so good in the picture)!

I made the three cheese macaroni, and enjoyed it both the first time, and also a few days later, re-warmed with a bit of water. It was even better the second time round!

Do you know that some of the SparkPeople Cookbook recipes are already on the site?

If you'd like ground turkey; substitute that for the bacon.

I plan to try the SparkPeople Cookbook SNEAK PEEK: Three-Cheese Macaroni on Sunday. Most likely I'll try it without the turkey bacon because I don't really like turkey bacon. I'll post back my result.

Since we have as yet only had the pre-view recipes - definately the Spring Cupcakes - they are just wonderful!!
I made the first batch as per recipe, and they dissapeared faster than they could cool - then experimented, also successfully with another batch of chocolate and yet another batch of lemon - they freeze well, without the glaze, too - which is a good thing with that number of cup cakes!!
They were so good I was inspired to blog on them - in a blog entitled - "Yummy"

On Sunday next - I am making the Salsa Chicken for lunch.

I can't wait to get the book, which will be about 2 weeks after release as it has a long journey!!

Everyone smiles in the same language.

Roasted Root Vegetables is one of my family favorites and it makes a great side dish when hosting a dinner party.
