I really like the multigrain rolls. Honestly though it's been a while since I have made anything from the cook book because we moved a couple of months ago and I haven't unpacked all of my books yet! I guess I need to get on that!

Made the Paprika Chicken this weekend. Very good and so easy. I sliced the leftovers very thinly and made sandwiches the next day. I love anything buffalo-flavored, so I'm looking forward to trying the Buffalo Chicken. Also on my list to try Spinach-Stuffed Chicken with Cheese Sauce. The Baked Chicken Tenders were ok, but I don't think they are on my do-again list. I've never been very successful with anything baked that was supposed to mimic fried. Just leaves me wanting the fried version. lol

So far the salsa chicken. It is so versatile. Cooked it on the weekend. Had it over rice, then in burritos, then made taquitos and taco salads out it. LOVE it.

I needed more veggies in my program. I liked salads but some time they do become boring to me. So as I was read The cookbook, I remembered that my Mom used to make spinach with olive oil . I threw in some almonds, a little grated cheese and it was very good.
Some times all you need is a little inspiration!

I just tried the Tuna N Pea Casserole. I haven't made a Tuna Casserole in more years that I can remember. I substituted, Almond Breeze for the milk, Best Foods Mayo w/Canola, and found a really low sodium can of Tuna. I haven't figured it all out yet, but that is my project for tonight. It was actually awesome. I omitted the peas because my son will not eat them. Bev

I just tried the broccoli with spaghetti squash and lemon pepper, this one's a keeper. The only moderation i made was to use McCormick's Lemon Pepper seasoning.

I bought the recipe book in the spring of last year and have tried about 3/4 of the recipes. What a great purchase. My favourite recipe is the Lemon Herb Roasted Chicken. I have never had roasted chicken taste so good. Another is the Quinoa with Pea Pods and Peppers with the maple glazed roasted salmon. The next day I break the salmon up and put in with quinoa for a fabulous cold salad for lunch. If I don't have pea pods I just use frozen peas and i think tastes just as good.

I recently made the Key Lime Tartlets...delish! I used some Gay Lee whipped cream in the can instead of whipping up the cream..basically the same calories and now I can freeze the tarts and have a single with cream when the urge hits!

My son and I really liked the mini turkey meatloaves! We had baked sweet potato and steamed broccoli with them and he even recognized that his plate looked like the plate model for healthy eating.

Spinach and Mushroom Stuffed Pork tenderloin, pg 208. I thought this recipe would be difficult to prepare, but I was quite surprised that it turned out so well. This was a major project for me. I used fresh spinach not frozen. Just delicious! emoticon

Silly as it sounds, the barbecue spice rub is my favorite or I should say most used. I put that stuff on everything from turkey burger and ribs to popcorn and roasted nuts!

Roasted Root Vegetables, pg 315. This is a great recipe for vegetables cooked in the oven. I've tried this recipe with a variety of veggies and each time I enjoyed the different mix. Even tried using a new veggie I had never eaten before, i.e., parsnips. Very nice side dish for this time of year. emoticon

Hi, I just joined this team though I bought the cookbook a couple of weeks ago. I'm looking for a tool I "thought" saw for creating a grocery list.

I've only made a couple of recipes so far, however, the Minestrone Soup with Parmesan Crisps is the best soup I have ever made (or eaten).

I started making a huge pot of soup each weekend and eating it throughout the week and it's been working well for my weight loss. I will be making the Minestrone again soon. emoticon
