Make extra. When cooking vegetables, makes 2-3 times more than you need. Store the extra away for tomorrow. You'll be more likely to eat them when they're convenient to prepare.

Buy unripe produce too. Bring home both yellow and green bananas, for example. Eat the ripe stuff now as the rest ripens later in the week. You'll have fresh food without making multiple grocery runs.
