I don't use either oils, so I can't help you with that. However, for weights I would say if you chose a weight and it is too easy at the end of the set then go up the next highest weight. That is really the only way I have found to figure out what is too light or too heavy.

Okay, first question; Which is better, flax seed or fish oil? Should I just take both and leave it at that?
Second, what is the best way to find my max (or fail) weight? Going around lifting various weight until I pass out sounds like a waste of time but I don't know a systematic method to figure it out.
