This thread always makes me remember the Mystery Dinner that my daughter and I attended as a gift. I'd rather it had been a Theatre! But, I guess it was fun in its own way. 18 strangers (except to the other half of their pair) sitting around a big table eating and trying to disseminate clues and figure out whodunit. It was a night out anyway. Next time, though, I'll confirm that I can eat and figure out who on the stage dunit. :)

Last night we had a crock pot meal with pork chops and barbeque sauce and potatoes. Very satisfying and healthy. Could also use chicken or beans even!!! Spice it up!!! Yes!!! Also, spiced up my oatmeal this morning with spices and hint of cocoa. Woo Hoo!

The lasagna was great Tanya! Hubby ate almost the whole thing, and I got my portion. hee hee Woo Hoo! Thank you! Also, made last night stir fry with brown rice and threw in frozen mixed veggies with sweet peppers and baby shrimp. emoticon

I made an interesting dinner tonight....Lasagna Italian style

As some of you know my oldest son went to Italy for 10 days in March. Well, he asked me if I would make a lasagna but do it like they do it in Italy. It was actually very simple, and to tell you the truth.....it was the best lasagna I have ever had and less work than the usual recipe! How's that for a great combo?

Made my usual spaghetti sauce, except no onions and half the amount of meat. Cooked up the lasagna noodles. Then layer the pan with the hot noodles and the hot sauce and top the whole thing with cheddar. I used white and orange old cheddar shredded up. Put the lasagna in the oven only long enough to melt the cheese and ta da....you're done and so is your lasagna. Mmmm.....mmmmm....very yummy. If anyone tries this or has made it this way before let me know, I would be very interested to hear what you think.

PS ~ There is only 1 piece left and everyone went back for seconds, even my hubby who is not the biggest fan of Italian food!

We had crock pot pork roast cooked with bay leaves, steamed rice and a stir fry made of celery, carrots, onion, green pepper and bok Choy. It was cooked in a small amount of toasted sesame oil, lite soy sauce, onion powder, ginger and chipotle seasoning.
For dessert, we had a fruit salad made with mandarin oranges, blueberries, strawberries and cantaloupe. Skim milk to drink

The scale doesn't determine who I am. It is made of metal, nuts and bolts. It has no feelings, no compassion.

My worth comes from who I am in Christ Jesus. I mess up too much on my own, but I can do everything with God's help.

I am having a 4 oz skinless, boneless chicken breast in shake n bake, garden salad with chopped red onion, tomato and 8 grams of shredded cheddar, topped with fat free Italian dressing, plus a glass of milk = 376 calories, 34 carbs 8 fat 40 protein

Baked Orange ... really simple and I love it. With having something sweet, I don't feel too deprived, lol.

I just peel and slice an orange. Lay in in a baking dish and sprinkle a teaspoon of diet sugar over it, and a few shakes of Cinnamon and then pop it in the oven, or into the microwave (at work), for 3 minutes.

I do the same using apple.

I'm finding it too cold to eat cold fruit at present, lol.

Judi, Thanks for the recipe, I'll have to try that, it sounds yummy!

We had a change of plans tonight for dinner, we went out to Applebee's for my birthday instead of the chicken legs...so now we have dinner for tomorrow night! Yeah, love being cooked ahead a little.

Unfortunately, dinner out didn't put me over my calories but the dessert did!!! Good thing I have new work out equipment!!!

My hubby BBQ'd steaks and I made little roasted red potatoes with rosemary and caesar salad, I also sauteed a sweet onion to go with it.
By the way I don't put croutons in my caesar salad any longer as I find it really cuts back on the calories. I prefer garden salad for an even leaner salad but have caesar on the weekends.

If you've ever made regular cabbage rolls, you will appreciate the lazy kind. You take the same ingredients, cook them all (with the cabbage shredded first) and then dump them all together with some diced tomatoes, and place in a roaster. Cover with tomato sauce, and bake about 45 minutes.

I don't follow a recipe (made this with my mom from childhood), but here are the ingredients:

1 cup brown rice, cooked (yields about two cups after cooking)
1 cabbage, shredded and steamed
1 lb. Lean ground beef, cooked with onion and garlic
1 large can diced tomatoes
1 jar tomato sauce

If you want to be really lazy, you can use the packages of coleslaw mix for the shredded cabbage. You'll get a bit of purple cabbage and some grated carrots, but I don't mind!

Had my 3 grandchildren today. Managed to go to the grocery and pick up a pizza crust and let the kids pick some veggies from the salad bar. Went home and we all put together a "happy face pizza" with good veggies and low fat cheese. Yummy! emoticon emoticon
