I love quinoa for breakfast. I use 1/4 cup of quinoa, 1/4 cup coconut milk, 1/4 cup of water. bring to a small boil, reduce the heat, and add a little cinnamon to taste, and a touch of honey. YUMMY ! Stir every couple of minutes until done, approximately 15 minutes total.

Funny to think of my pilaf as a recipe, but I guess it is! I just cook brown rice for about 30 minutes and then add quinoa (about 1/3 amount of brown rice used), about Tbsp olive oil, green peas, pine nuts and chopped red peppers and cook for another 15 minutes. Sometimes it needs a little more water when you add the quinoa and veggies too. Like someone else said, wherever you use rice! I like to mix rice and quinoa wherever you would typically use rice.

Sounds like a superfood to me. I looked it up and found this information-quinoa is an amino acid-rich (protein) seed that has a fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked. (sounds a little like barley to me) Quinoa is a relative of leafy green vegetables like spinach and Swiss chard. This recently rediscovered ancient "grain" was once considered "the gold of the Incas."
1/4 cup has 158 calories and the following food values given as per cent of daily food requirement:
48% manganese, 22% magnesium and iron, 17% of tryptophan, copper and phosphorus. No doubt there are also antioxidants since it is related to spinach. Would you post some of your recipes please?

"For I know the plans I have for you," declares the Lord, "Plans to prosper you and
not to harm you, plans to give you hope and a future." Jeremiah 29:11

I don't know if quinoa is a super food, but we love it. I'm even trying to grow some in my garden this year! I make a brown rice and quinoa pilaf quite often and I also use it in my cabbage roll stuffing for a nice flavour.
