I love lots of grains, but my favorite oatmeal dish is overnight oats. I eat it about 2-3 times a week or more.
1/2 cup oatmeal
1/2 cup soymilk of choice (I prefer Naturally Preferred Organic Vanilla..very creamy)
Cinnamon to taste.
1 tsp of orange zest (optional)
Pour soymilk over oats and stir. Let sit, covered in the fridge overnight.
In the morning, stir again, warm if desired (I like cold or just warmed to take the chill off).
Add fruit and/or nuts as desired.
For people that don't like oatmeal, never gave overnight oats a try!

I have said before that I think I could live off of oatmeal! I love it. For breakfast I almost always have (when I'm eating well, that is! lol) oatmeal made this way:
1/4 cup regular rolled oats
3/4 cups water
1/2 tablespoon of real maple syrup
about 10 raisins
one crushed walnut
microwave (in a big dish, because it bubbles up) for 3 minutes, let cool a few minutes... its so good!
