I think beets are yummy. They are one of my favorite vegetables - in all kinds of dishes. I like beet greans too, cooked up like spinach.
When I am cooking them, though, I often wish I had a complete body covering on. That red stain gets into everything.

I have fresh beets from the market today that I will roast and have half with dinner tomorrow, the other half I'll mix with some balsamic vinegar, EVOO, sea salt, garlic and seasonings and a little stevia. Then I add some to my daily salads. Keeps well in a glass or stainless steel bowl for a week +-.

I Love sauted beet greens, or collard, spinach etc w olive oil and garlic. I juice raw beets. They are very sweet and wonderful, like carrots. Ive had them pickled in a jar or made a salad with a can, but have never baked my own. I think I will give that a try,thanks for a new way to eat vegis!

i eat the beet greens as well as the beat. i like to roast my beet as described earlier. the beet greens i usually just wash well, slice into bite size widths and then pan saute with some oil like any other green.

yellow beets and red beets taste pretty much the same to me.

i usually roast my beets. wash them well first, leave the skin on, wrap them in foil, and bake for about an hour at 425. then if i'm going to eat them i stick a cooking fork in them, so i can peel the skin off easily. if i'm going to let them cool before i eat them, i peel them with the faucet running over them, that way my fingers and hands don't turn pink.

great just to eat plain with a little salt, added to a salad, chopped up with some mandarins or other sweet fruit. just pinky purple yumminess. comfort food for me because it gives me a filling healthy sweetness.

I only eat Harvard Beets they come in a jar and they are sweet and good not like any other beet I've tasted.

The only way I have ever eaten beets was out of a can. They didn't taste too great. The other day, I was watching the Rachael Ray show and she prepared the yellow ones. What is the difference between the yellow ones and the red ones? Thanks!

one of my favorite ways to eat beets is to wash, steam, then peel and chop them and serve over a salad of baby spinach or arugula with feta, walnuts, and balsamic vinaigrette. A quick and delicious meal.
