yellow beets and red beets taste pretty much the same to me.
i usually roast my beets. wash them well first, leave the skin on, wrap them in foil, and bake for about an hour at 425. then if i'm going to eat them i stick a cooking fork in them, so i can peel the skin off easily. if i'm going to let them cool before i eat them, i peel them with the faucet running over them, that way my fingers and hands don't turn pink.
great just to eat plain with a little salt, added to a salad, chopped up with some mandarins or other sweet fruit. just pinky purple yumminess. comfort food for me because it gives me a filling healthy sweetness.
